How do you make your cheese sauce? I have a standard method that I am never 100% satisfied with.

I went with this - and I’d probably do 1/2 the portion of it. Maybe more slides of cheese and a dash more milk too to make it a bit more runny.

Vegetarian cevapcici (made from roasted vegetables), spicy rice and tsatsiki. Plus a bit of Nando's Piri Piri sauce for an extra kick.

    Only a best guestimate one:

    Cevapcici:

    For roasting:
    1 aubergine, cut into chunks
    1 courgette, cut into chunks
    4 mushrooms, quartered
1 red pepper, cut into chunks
    1 onion, sliced
    3 cloves of garlic, sliced
    3 sprigs of rosemary
    olive oil

    1/2 onion, diced
    1 clove of garlic, minced
    3 tsp of paprika
    1/2 tsp of smoked paprika
    1 tsp of chili
    chopped parsley
    Breadcrumbs
    Grated pecorino or parmesan

Cut your vegetables, then places them in a bowl, pour over some olive oil and mix well. Line a tray with non-stick baking paper, place the rosemary on it, then cover with the vegetables. Bake at 200 degrees for around 30 minutes, until the veg are soft and slightly browned.

Remove them and let them cool down a bit, then blend them into a smooth-ish paste.
Mix with the spices, breadcrumbs and cheese until you have a dough you can shape. Shape it into little sausages, then fry or bake until browned.

Beans and rice as some kind of combo have become very common practice in this house too gloom, hard to beat tbh, chips and spuds have taken a back seat to them here.

Tonight we had marinated pork chops, bean salad and rice and it was delicious.

    Veggie pizzas :

I've recently started using beer instead of water to make the pizza dough. It really works well, and gives the base a really nice savoury flavour.
