    I haven't ran the meal plan past himself yet, but at this stage, he'll eat what he's told/given :P

    Saturday: Chicken korma (the lazy kind from a jar)
    Sunday: Steak! With fried onions, potatoes and veg.
    Monday: Creamy tuscan chicken with spinach and sundried tomatoes. Probably with pasta.
    Tuesday: Leftovers from Monday
    Wednesday: Deconstructed shepards pie
    Thursday: Leftovers from Wednesday
    Friday: Meat, potatoes and veg. We'll just see what meat looks good in the shops.

    The exact days may get shifted around.

    My meal planning has gone to hell recently.

    All of my fresh fruit and veg are going off while I'm living on sandwiches :(

    Not sure if it's the onset of winter or lockdown or something.

    To get out of the rut, im planning on making a cabbage and tomato soup. Something comforting and healthy.

    Freezer and fridge audit has lead to this being the cooking plan for the next two days, to be consumed during the week or next week

    Large pot of gumbo, may make 6 servings so 4 for the freezer
    Spicy meatballs (have the meatballs, need the sauce) for two servings
    Korean beef with a pear marinade, single serving

    And this is the 'reconstruction from frozen ingredients' one

    Chicken katsu with chips - everything frozen and ready
    Matar paneer with naan bread - everything frozen and ready except the naans. Main meal will be constructed from frozen paneer, a frozen curry base, frozen peas, frozen coriander and some extra spices
    Lasagna - have the ragu cooked, just need to assemble and bake.

    Also, after the pub soup thread from a while ago, the bag of chopped leeks and bag of sliced carrots in the freezer is likely to end up as some pub style cream of vegetable soup. Bought a load of frozen veg at the start of Lockdown 1 in case we couldn't get out to the shops; but that never happened.

    Sunday -Roast pork with croquettes, roasties, veg, stuffing & gravy.
    Monday -Sausage casserole with mash.
    Tuesday -Fajitas
    Wednesday -Haddock, home made chips + peas.
    Thursday -Striploin steak, fried onions, mash and peas.
    Friday -Chicken Madras, rice + naan bread.
    Saturday-Pepperoni pizza, salad + wedges.

    This thread inspired me over the weekend to try organise myself better. Currently without a microwave so trying to make do.

    Breakfast: same as always, porridge...how exciting. If I'm in the office I may treat myself to a sausage roll or if I'm up really early I'll make some eggs but its mainly porridge. May have to be toast until we get one.


    Lunches are the same as always, ham, cheese, tomato and lettuce sambos with crisps or popcorn I pop myself for me. Himself will have a cup of soup with his.

    Snacks are chocolate rice cakes and cheese sticks or cheese and crackers


    Dinners as followed

    Today: bacon and cabbage with mash and veg
    Tomorrow: leftover bacon in an omelette

    No set day for the rest of the week but I have a plan:

    Potato and parmesan galette with a soft fried egg
    Homemade burgers with peppercorn sauce
    Wedges and chicken tenders (lazy freezer meal)
    Salt and chilli chicken with egg fried rice and curry or a quick veg stir fry depends how I'm going
    Takeaway on Saturday.


    Let's see if I stick to it :rolleyes:

    Monday: Spagetti bolognase
    Tuesdsay: Bangers & mash
    Wednesday: Kedgeree

    Thursday: Savoury mince, carrots & mash.

    Friday: Takeaway.

    I need to use up freezer stuff next week in advance of the pre-Christmas defrost

    Ready Meals - Sweet/Sour Chicken, Thai Chicken Curry with rice

    Spaghetti bolognese

    Tuna fishcakes (flaked tuna from the can, grated ginger/garlic, lime zest, lime juice, 1 egg, breadcrumbs, soy sauce, fish sauce) - served on their own for a low carb dinner - delicious with a bit of sweet chilli sauce on the side.

    Sweet potato soup

    Home-made Lasagne on Saturday, we have company. Will be served with oven chips, salad, garlic bread and a generous helping of wine.

    Sunday - try and burn off some of Saturday's feast

    We are the picture of health, we had Fray Bentos chicken pie last night with baby potatoes, carrots and brocolli.
    Tonight is beef stirfry with noodles. The beef has been marinating in chilli, ginger, garlic and soy sauce since yesterday.
    Tomorrow is hake in some form.
    Friday is going to be something previously batch cooked and frozen so maybe veggie lasagne or veggie chilli.
    Saturday will be a Chinese for one because my husband is working!

    The one positive of lockdown is adding more to our arsenal - We cook almost everything from scratch these days.
    • Monday: Chicken and Leek pie
    • Tuesday: Beef enchiladas
    • Wednesday (today): Coddle - it's a day for it
    • Thursday: Veg Risotto
    • Friday: Takeaway
    • Saturday: Beef stirfry
      (I batch prepare topside beef for this and freeze in portions to defrost on the day - got this beef prep method from Ziangs food workshop on Youtube)
    • Sunday: Italian Spiced Chicken Breast cooked on the BBQ on a bed of Spaghetti Aglio e Olio
      (got this recipe from Sam the cooking guy on youtube)

    Where do you get the poblano peppers? Only seen and used them once - normally substitute in a bell pepper if I see them on a recipe.

    We are the picture of health, we had Fray Bentos chicken pie last night with baby potatoes, carrots and brocolli.

    I picked up several of these (along with other tinned meats) for the store-cupboard for the zombie apocalypse first lockdown -and keeping a well stocked pantry pending Brexit in January anyway. They don't have a huge amount of meat in them but it's inspired me to try to do a home made version of their pies.

    I must go hunting for a good steak and kidney recipe.

    It’s a brilliant recipe! We always eat in Wahaca when we’re in London so I make the little pork pibil tacos you get there with her pink pickled onions. It’s also really good with rice and freezes perfectly. Which given the amount you’ll be making is a good thing! :)
