  • I’m phoning it in this week and relying more on pre prepared foods fuelled by a trip to the nice dunnes for treats.

    A little hack: Lidl's fresh chicken burgers are just minced thighs with a tiny bit of seasoning so I use these rather than mincing my own thighs.

    I make my own pepper paste using the Lidl jarred roasted peppers. Rinse, drain, throw in a blender with three very hot chillies and the juice of a lemon, then simmer over a low heat with a good heaped teaspoon of salt for an hour or two until it's reduced right down to a lovely thick paste. Will keep in the fridge for a couple of weeks, or you can freeze it.

    And pul biber is Aleppo pepper. If you can't find that, red chilli flakes are fine.


    Can I use filo pastry instead of Yufka? or what would be the nearest substitution do you think? If there isn't I could probably order it online but if I could get away with an alternative it would be better.

  • Saturday: Pork chops with mash and peas

    Tuesday: Chicken stuffed with pesto and wrapped with bacon. Will probably just do mash and peas with it.
    Wednesday: Wagamammas chicken katsu curry recipe with rice and broccoli (although I'll be cheating and using breaded chicken from the supermarket!)
    Thursday: Leftover chicken katsu curry
    Friday: Some sort of meat, potato and veg

  • No Particular order but Today is African Peanut stew

    Monday: Vietnamese caramelised pork bowls

    Tuesday: Chicken topped with pesto, tomato and mozzarella. With potatoes and veg.

    Wednesday: Tuscan chicken with pasta

    Thursday: Bought some reggae reggae sauce... about a decade late to the trend, but going to try it as a chicken marinade! With potatoes and veg.

    Friday: Leftover Tuscan chicken with pasta

    (Will probably change the order around a bit)




  • This evening was pizza takeaway. I'm getting a very small shop delivered and aim to use up what's in the fridge and freezer.

    Sunday: Swedish Meatballs and mash
    Monday: Pork chop tray bake
    Tuesday: Lamb cutlets with cous cous
    Wednesday: Steak
    Thursday: Chicken risotto
    Friday: Savoury pastry tart

    I have order a BuJo dine at home Easter Feast for the weekend. Saturday will be BuJo burgers, Sunday roast beef.

    There is too much red meat this week for my liking, but need to empty the freezer to make space.




  • When cooking for one it's difficult. I really miss having lunch out.

    Mine will be basic. Plain veg each day with meat and fish.




  • I'm also only making meals for one. At least I can have whatever I want to eat. I'll be doubling up on a couple of meals.

    Wednesday: stir fry or duck leg cassoulet. (I’ve leftover rice but might use it for lunch instead. Leftover cassoulet beans are in the freezer)
    Thursday: BBQ. Might do a spatchcock chicken, corn on the cob definitely
    Friday: chilli or maybe a taco lasagne type thing. I’ve wraps that are welded together so this could use them up
    Saturday: homemade pizza or takeaway
    Sunday: no idea. Must see how the leftovers are doing. Or a take away

    I start my weekly meals from Wednesday as that's when I get my grocery delivery.




  • Shopping arrives today, so hope everything I ordered is available! It's my partner's son's birthday this day week, so we will do a takeaway for his birthday then (his choice). I've never cooked duck on the BBQ, but got a smoker box last week for it so gonna see how it works out if the weather is nice.

    I got the chilli peanut beef recipe from this thread (thanks Cee_Jay!) it was New Recipe night and really nice! It's a keeper.




  • We love that chilli peanut beef so much! It is so tasty!
    We had a BBQ yesterday (cooked indoors because of the rain) for my stepson's birthday. There is so much food leftover which will be the basis of this week's meal planning.

    Thursday Beef stir fry - possibly chilli peanut beef

    Chilli Peanut Beef

    Ingredients
    400g free-range rump steak, sliced into 1.5cm slices
    200g green beans
    175g baby sweetcorn
    1 red pepper, finely sliced
    1 red chilli, finely grated
    2 cloves of garlic, finely grated
    5cm fresh ginger, grated
    1 tsp sea salt flakes
    1 tbsp sesame oil

    FOR THE DRESSING
    45g crunchy peanut butter
    1 tbsp dark soy sauce
    1 tbsp rice vinegar or lime juice
    1 tbsp water

    TO SERVE
    50g spinach, roughly chopped
    3 spring onions, finely sliced
    a handful of salted peanuts, roughly chopped
    quick-cook noodles or rice

    Directions
    Step 1 Preheat the oven to 220C/ 200C fan/gas 7. Tip the sliced steak, green beans, sweetcorn and pepper into a roasting tin large enough to hold all the veg in a single layer.

    Step 2 Add the grated chilli, garlic, ginger, sea salt and sesame oil and mix to make sure everything is coated.

    Step 3 Move the slices of steak to the top of the tin, as you want them to char nicely, then transfer to the oven to roast for 25 minutes.

    Step 4 Meanwhile, mix the peanut butter, soy sauce and rice vinegar or lime juice with the water.

    Step 5 Once the beef is cooked, stir through the spinach, pour over the dressing, scatter with the spring onions and salted peanuts and serve with the cooked noodles or rice.

    I added a bit of chilli to the sauce for a bit of heat.

  • Had roast chicken for the last two days. Started pulled pork yesterday for today and tomorrow. Burgers Friday, takeaway Saturday.
