This morning I made my first successful attempt at poached eggs, hooray! They were lovely with a teeny bit of salt and pepper. Also, I've been converted to O'Neills rashers, I don't think I could go back to Dennys :o

I'm trying to cut down on my carb consumption, hence the rashers and eggs.

I had a hot chocolate and a chocolate muffin. It's my birthday and chocolate is healthy when it's your birthday. Shall be making a full Irish in a while. :)

Cornflakes with yogurt instead of milk.
    Toast.

I look at these photos though and wonder why can't I feed myself like that.

I wonder how early they get up in the morning. I barely have time to grab cereal to bring with me before I have to be out of the house.

This is the one I made with a few swaps - no coconut because I didn't have any and swapped it for pumpkin seeds & walnuts instead. Vanilla essence instead of the pods and I added 2 tbsp of agave nectar (any syrup will do) for sweetness. Oh, and I have a bag of dried cranberries so added a load of those too. Oh, and I burnt the ass out of it initially. Don't do that.

    It's so nice & crunchy! I'm a buckwheat addict.

Thanks:) Buckwheat is pretty tasty alright - probably why i like gluten free pancakes more than regular!

Nothing exciting ... Bran Flakes with tonnes of strawberries and blueberries and greek yogurt. And a nice big glass of juicy orange juice. Simple but yummy!

Did you ever have one of those days when you go to make something, and you're halfway through when you realise you've not got what you need? Went to make scones for breakfast, came time to stir in the dried fruit - nothing in the press - decided to try chopped up dark chocolate. Came time to stir in the buttermilk - it smelled awful, had to bin it. Decided to mix up the tiny bit of Greek yoghurt I'd left with some just-passed-its-date milk that was in the fridge (?!) that milk also looked in no way useable. Desperate for breakfast I reached for the only thing left in the fridge: chocolate soya milk. Then I made a mess of the mix. I'd already subbed spelt flour in for regular flour and when I added the soya milk, the flour/soakage ratio was different so it went from not incorporated to too wet quickly, had to add more flour, more (chunks of) butter on the fly. At this stage thought I was going to be posting pics to the disaster thread, but lo and behold: they're gorgeous. I can't believe I'm saying this but I'd actually make them again...

Introducing the spelt + soya chocolate milk + chocolate chip scone

The Happy Pear granola with some natural yoghurt and a spoon of gooseberry compote.
That will keep me going for 4 or 5 hours

I made home-made baked beans for the first time on Friday, so I had a little of those on Saturday morning, with home-made porridge bread, mature cheddar and a fried egg:

I had a little bit of cake (I was going to yoga in a bit, so I was earning it!!) - home-made ginger cake with mascarpone and home-made rhubarb ginger jam:

The plate the cake's on is a tiny espresso saucer - as everyone knows, breakfast cake must be a small serving.
