    Your omelettes (green and otherwise) always look soooo good, would you mind giving step-by-step instructions how you make them, including quantities etc? Think "omelettes for dummies"! :D I know they're so basic but mine never turn out right.

    I added extra handful of spinach today hence the greener than green appearance.

    Blend 1-2 handfuls of spinach with 1/4 cup milk (I used almond milk). Pour into 2 large lightly beaten eggs. Season with pepper and salt (go easy on this if you plan to fill the omelette with salty fillings later).
    Heat ceramic/non stick pan on medium high and melt 1 tbsp butter/oil (I usually use coconut oil/ghee). Pour in the egg mix.
    As the egg starts to set, use a wooden spoon to drag towards the middle of the pan, swirling the pan to fill any gaps with the raw egg mix so it'll cook evenly.
    Add any fillings when the eggs are about to set. Using a wide spatula, fold the omelette in the pan, then slide it onto the plate.

    I did not realise that pesto was so good in scrambled eggs! I had some avocado and cashew nuts on the side and a black coffee.

    I went for a long swim before breakfast yesterday, so stricly speaking it was more like brunch than breakfast.

    I made myself some shakshuka - it was my first try ever and boy am I gonna keep having that for brunches! Unbelieveably delicious.
    At first I wasn't too sure about tomatoes, peppers and runny egg, but I can say hand on heart that it's a brilliant combination.

    It didn't last long enough for me to take a picture, though.

    Bit of a weird one but it worked! Fried egg, avocado and sausages in a roll. It was pretty good.

    That *does* sound really good! Nice one rosie16, I'm putting that on my breakfast list.

    This morning was ryvitas with whipped Philadelphia. I loves whipped Philadelphia so I do.

    I'm going to try baked, seasoned eggs in avocado halves that I saw demonstrated. I've no tin foil but will see what it's like.

    Just don't break the yolk.
    It needed balsamic or something, it's a little bland.
