I’d say 7 1/2 to 8hrs in total over three sittings

Must have brought this model to the wind tunnel by mistake last year if the team performance is anything to go by.

Been meaning to get a technic set myself.

You should have a look at rebrickable

Some kits are expensive and you need to source parts or buy a kit put together by a 3rd party for some kits like this:

Others use only the parts in existing lego kits and you buy the instructions like this based of the 911 rsr:
