did that pour over and wasn't that impressed tbh ha!

going to aeropress it now in a while

That's interesting, I'll see what it's like on the v60 today for comparison..

I did it on the chemex, 32g/500ml, medium/ coarse grind(20 Baratza virtuoso), 45secomd bloom, 4:6 method)..95°C.3.30 total brew time .

not too far off that on the v60, 30g 500ml 45s bloom and poured the rest in in about 2.30

setting 15 on the Encore, which is a touch lower than I use for french press and a touch higher than Aero

    water just off boiling

    Hey Coffee Lovers,

Just trying to ask a snobby question here.

Where would you get your beans from, if sustainability and low carbon footprint would be equally important factor as taste .

  • Registered Users Posts: 19,689 ✭✭✭✭cnocbui

I don't care about carbon footprint.

That wasn't what they want to know.

If you are concerned about sustainability, roasters like Imbibe and Farmhand offer their coffee in reusable containers. I know the Dublin Food Coop supply Imbibe packaging free so you bring your container of choice and pay by weight. Imbibe have pretty good practices as far as I can see as well as forwarding a proportion of their projects to worthwhile projects, such as building a bridge in Colombia where one of their coffees are sourced. https://imbibe.ie/product/el-puente/

Whoops, I have been doing it all wrong. Next time I need some beans I'll drive the 160km to Dublin, get on a plane to Luxembourg or the UK, and ask them to refill the bags I'll bring with me.

One place I get coffee from claims to do their bit for the growers by paying more:
As a specialised roasting plant for top quality coffees, it is particularly important for Mondo del Caffè to maintain the quality of its raw products (green coffees) at a uniquely high level. At the same time, we take into account ethical and social aspects in coffee production.

Instead of relying on gradings or seals, we go directly to the farmers and buy our green coffees there. In doing so, we pay prices that are clearly above the world market level (about 2-3 times higher). In return we demand the very best green coffee quality and compliance with our social standards from the producers. These include among others:

    no child labour
Payment of fair wages for harvest workers and pickers
    no exploitation
Biodiversity and the avoidance of unnecessary chemicals
    and a lot more.

So I get a warm fuzzy glow whenever I order. Of course in the back of my mind there's the idea that large tracts of virgin jungle and vegetation are often cleared to grow non-native coffee plants, resulting in soil erosion, water contamination and loss of habitat for wildlife, but gee, the kiddies don't have to develop a sense of balance when crossing the stream anymore, so that's great.

I'm not sure, but... I think I may be sensing some cynicism

I eat avocados, bananas and mangoes too, but I recycle like a boss - and then the mongs go and bury my carefully washed and recycled stuff in the landfill. Me, cynical? Nooooo.

Very little gets buried in landfill these days. The vast majority of MSW is either incinerated in Ireland or exported abroad for incineration.

Imbibe have a Panama Gesha for this months coffee club, La Huella Canas Verdes N97 and a Nicaraguan single origin.

So I did my first brew of the Gesha today, V60, 30g at 60g/l, all water was in by around 2 minutes and draw down finished at around 3:20 so it was a bit of a longer extraction than generally would be done.

Really nice, very floral, a little bit overextracted so probably not as clean as could be. I've had similar brews from some of the Bailies microlots, but I'm putting this more down to those being really good brews and me slightly messing this one up.

Going to give it a shot later with the clever dripper and probably switch down to the V60 01 and try get closer to a 2-2:30 draw down with a smaller dose.

Bailies have 10% off at the moment, use code BREWMANCE at checkout, no idea how long this will last

    Cheers for that.

    Any recommendations with them?

Bear in mind say WCC Brazilian and Badger and Dodo Blackwater Blend would suit my palate re their flavour and tang as an idea.

I've never had either of those, but I've always found their East African offerings to be more interesting than the Latin Americans - I lean heavily to light to medium roast African coffees though, so I am very biased on that.

Perfect. That works for me as I do like some Ethiopians I have tried. :)

They've had 10% off every other week I think for the last 2 months.

I had to go into work yesterday fo some checks. I got to pass Meet Me in The Morning/Reference, Network and Bald Barista.

All are open for takeaway, and Reference has some Nomad mexican beans. Very nice I have to say

Popped in there this morning on the way back from Vincent's Hospital and got an Americano. First coffee I have bought takeaway since March. Weird is not the word. Forgot to ask what they had on for TA though. It was gorgeous.

I had hoped they had some WCC in stock but alas.

Picked up some Nomad (Rwanda Gitega) while I was there anyway. So that will see me through til next week. :)

Ordered from Bailies over a week ago and no sign of the coffee. Is this unusual for them to be so slow? A year since last order but never had to wait this long.

DPD are a disaster at the moment... Ive had a rake of problems with them.

The biggest issue is their lack of honestly.. rather than saying they're having problems they say that you didn't provide the correct address, you weren't home, they tried multiple times.. all bull**** for the fact they are overstretched and can't manage the deliveries.

How are they still in business had huge problems with them even before Covid?

As you predicted. Called to my wife's business at lunchtime last Monday and didn't ring just left. Discovered it's back at their depot and when I rang today to see when they would deliver it today they said the van had gone out and the package is still in depot. Monday now. I'm out of coffee. I won't be ordering again of Bailies if this is the service DPD are offering. I have no problem with any other deliveries. Bag of Sh**e.

When did you order? They normally roast on a Monday and I get it on a Thursday/Friday. Lot of problems with DPD at the moment..

DPD have lost a lot of corporate, and small business custom during this crisis.

Kinsale Coffee seem super cheap... 21euro for 1KG bag!

I know they don't roast their own (Bailies coffee I think) but I ordered off Coffee Angel yesterday and was delivered to me today. They are not using a courier it seems - think it was an employee who hand delivered it.

Was waiting over 2 weeks for an order from Cloud Picker using....DPD.

Never heard of Wild Heart Coffee. I messaged them on IG to find out if they had any Rwandan left and they were super friendly. Ordered some so I'll report in cause they're only opened. Said they'd have four more types of coffee on their webstore in about two weeks.
