    Courgette & coriander egg mini 'muffins' with a little dot of sriracha. Kinda like these delicious bad boys but with random stuff from my fridge instead of the actual ingredients

    Oooh, thank you for linking to those! I might make those at the weekend to use up a glut of greens that my fridge acquired in a fit of January-induced healthy eating motivation. I'm a bit of a food freak though in that I'm not really into bacon (I know, I'm a freak :o). I wonder what could I line the muffin tins with instead of bacon?


    On topic, breakfasts this week have been spelt McCambridge's bread toasted with hummus and hot water with lemon. A surprisingly filling breakfast.

    Hmmph. Two eggs lightly whisked, added in double cream left over from Christmas. Two days out of date but I AM STILL HERE!

    Lightly scrambled with a smidgeon of Manchego (yes leftover from Christmas!)

    Two slices of wholemeal toast and Kerrygold.

    I did not need lunch at all. Absolutely gorgeous.

    You can line them with bread. Either roll a slice of bread with a rolling pin to get it nice and flat and thin, or push it into the base of the muffin tins. Might be an idea to put a bit of melted butter on the outside of the bread so it doesn't stick & also so it crispens up when baked.

    I never understood the layering. Maybe for esthetics? I always just mix everything. There's loads of recipes for overnight oats on Pinterest or if you google. It's really nice...and handy as no prepping in the morning.

    This morning I had egg muffin/mini quiches.

    Made with lots of smoked ham, fried onion, cajun spice and topped with a little cheddar.

    Poached egg on a slice of wholegrain toast. I'm almost certain I heard my weighing scales let out a little groan when I stood on it this morning so it's probably time to give up the 'sure it's Christmas' excuse for eating biscuits for breakfast and be healthy again! :mad:

    I'm not a breakfast eater but I had a craving for something brunchy on Saturday so made sriracha sweet potato hash browns. Only I'd no sriracha so used a mix of Frank's & Tabasco.
