    Made Roz Purcell's savoury buckwheat crepes with creamy mushroom and spinach filling. The crepe itself was yum, but the filling, made with tahini and nutritional yeast flakes is yuck. I scraped them out, just left the mushrooms, and added feta, rocket and cherry tomatoes.

    Don't usually post here as b'fast for me is usually a coffee in the hand going out the door, but I'm working from home today and am having Mrs. Loire's homemade granola with blueberries, banana, yoghurt and some honey.

    Today I had tescos "glorious grain" bread with banana mashed iwth coconut and peanut butter. If you haven't tried meridians new coconut and peanut butter I'd really recommend trying it. It's absolutely delicious. We've had nearly a full jar in just under a week. Usually a jar of peanut butter would last us a month. Holland and barret have buy one get one half price on everything at the moment so you're getting a good price on it too. (I got the cashew butter too, fabulously creamy!)

    I got very excited about the peanut and coconut stuff but I didn't like it at all, didn't realise until I read the ingredients list that it contains honey which kind of ruined it for me!
    Love cashew butter, often have it as a snack with a Ryvita and an apple.
    Breakfast for me today was All Bran, raspberries, blueberries, a pink lady apple and a little 3 ingredient muffin (banana/egg/raspberry with a drop of vanilla essence), yum :)

    I've never had cashew butter because I hate cashews. I think they taste watery or something, I just got it for the baby. I even used it last night in a stir fry sauce. I'm a convert :D

    Can I have your muffin recipe please.

    I intended picking up the peanut and coconut butter but accidentally picked up the almond and coconut butter instead. It's nice and it's softer and easier to spread but I prefer peanut butter so I'm definitely going to get it right the next time!

    I love the coconut-almond one. Spread on rice cake & top with sliced banana. My perfect elevenses.

    I just realised it was the coconut/almond one I picked up, not the coconut/peanut one.
    Anyway, here's the muffin recipe, really easy! Preheat oven to 190, mash 2 bananas and beat in 4 large eggs and a few drops of vanilla extract with a fork, put 12 silicone bun cases into a patty tin, lightly oil then pop 3 or 4 raspberries into each one then top with the banana/egg mixture (I use an ice cream scoop for this), bang the tin on the countertop a couple of times to disperse any air bubbles, then bake for about 20 minutes. They're not nice hot (very omlettey!) but lovely just warm or fully cool. They keep for 3-4 days in a cool place.
    I've tried this without using bun cases (just greasing the patty tin) and they stuck quite badly. I can't see paper cases working well either, but I've had success with the little disposable tin foil trays too.

    I saw Kellogs do a dark choc and fruit granola so I picked it up in Dunnes, on offer for €2 I think. Love granola with vanilla yoghurt and some fresh fruit. Yum.

    It's a chocolate syrup that can be used to make a hot choc or can be used as a choc sauce. Very rich and intense chocolate flavour.

    You can get it in some Tescos, Holland and Barrett, some health food shops and it comes up in Aldi from time to time too.

    It's mostly in the linked twitter thread.

    Go find crumpet/egg rings if you don't already own them. Teflon coated are the job coz they're a pain to get the egg out of and clean otherwise.

    Basically, acquire english muffins from Aldi (they're perfect for the job, right amount of chewiness if McMuffins are your thing) (Alternatively the McCloskeys breakfast muffins are nice, but not quite the thing for replicating the McMuffin).
    Get some pork sausage meat from your favourite supplier of sausage meat (or squeeze out some good sausages), mix in some extra sage and blackpepper (maybe 1tsp sage for a half pount of sausage meat, black pepper as much as you like). Mash into a patty shape and start frying (no need for extra oil).
    Heat a pan for the egg (i use a separate pan as the vegetarian eats this sans-sausage), butter the egg ring and place on the pan to heat.
    Crack an egg into the eggring. Burst the yolk slightly (alá McD's) to ensure there's yolk in every bite but don't scramble it. Season with salt and pepper. If your pan has a lid, add some water outside the eggring and cover it to let it steam gently (no panic ifyou don't)
    Start toasting the muffins (I do them in the grill, part toast the outsides and fully toast the middle).
    Flip the egg over when it looks mostly cooked. Removing the ring before or after this step is up to you and how sticky your egg rings are.
    Assemble with a cheese slice (I use mature easi singles when I can get them, the vegetarian prefers proper cheddar), sausage patty, circle egg, and the top of the muffin (that you butter a bit).

    It's a tall sandwich and inclined to try to escape (like a real egg McMuffin), so kitchen paper is the best way. Also it absorbs the grease, unlike the tissue wrapping a McMuffin.

    Enjoy! (you can also do rashers in place of the sausage meat, but sausage patties are one of the best things ever).

    Looks amazing and I agree, well seasoned sausage patties (burgers) are soooooo much better than bacon.

    Soya milk pancakes with blueberries, pears, oranges and melon.

    I had not made pancakes in ages because I hate soya milk, almond milk etc is too expensive for pancakes IMO and the baby can't hve cows milk. But I decided to get soya to try a bechemel sauce with, and I had some left over. I couldn't taste a difference at all. Delighted, pancakes are back on the menu.

    I made creamy coconut porridge from Deliciously Ella's food blog. It was like having dessert for breakfast! Made it with alpro coconut milk and used crunchy cashew butter and topped with a few chopped nuts
