Aldi herb leaves with olive oil and balsamic vinegar with grilled streaky bacon chopped and sprinkled over the leaves plus two poached eggs with fresh ground black pepper.

I had some eggs, tomatoes, mushrooms and a slice of grilled bacon.

My six year old daughter had a bowl of steaming mussells.

That's what I get for doing a "pinky promise" that she could choose her own breakfast.

I had a pork loin, slow cooked with some whole, jacket on spuds in with them for dinner on Monday evening.

Yesterday morning, I made a kind of frittata/omelette with the left overs for yesterdays breakfast.

Shallow fried some of the pork, spuds (peeled them) mushrooms, scallions and a bit of chopped chilli (I'm a devil for them)

Poured in my egg mixture, let it semi-set, then discovered I had no feta cheese left (dam:mad:) and had to make do with sprinkling some grated cheddar on top.

To finish off, placed the whole thing under the grill to give it a nice browned top.

It was pretty dam good too.

Pancakes, I usually hate doing them but I made the mix yesterday and left it in the fridge overnight. It seemed to cook much more easily for me. Fried in coconut oil and drenched with maple syrup. Delicious.

Forgot to take a photo but: slice of soda bread, quarter of avocado (mashed), poached egg.

Overcooked the egg by about 30 seconds, but still very tasty.

A rasher sandwich, on Brennan's white sliced pan, toasted on one side only. And tea.

Have wanted to make these for a while and as I'm working from home today I waited for the rest of the family to leave before making them :D

    20170112-09251484213401.jpg

Here's the actual recipe I followed

It's based on a popular Indian street food of the same name

They were surprisingly quick and easy to make, very nice to eat and the recommendation to have them with Ketchup is spot on.

The only tip I'd recommend is that you make them in a wok or small pan so the eggs stay small enough to be covered by the bun. I used a hot dog bun and it worked fine. You really need to squash it down and keep it on the pan until the bread is quite flat and there's a nice toastie crust on it.

    I had disco eggs too.

First id even heard of them. Picked up a packet of chatt masala in the local ethnic spice shop for 99c.

Good breakfast. Was an interesting change.

Pan fried some chopped up mushrooms with bacon.

Tipped them into a ceramic baking pot.

    Sprinkled over some grated cheese.

    Poured over baked beans.

Cracked two eggs on the top, and baked in the oven for ten minutes.

Out came a layered dish of tastiness. :)

Hotel Breakie this morning. I have sinned! Fortunately I hit the dining room at the best time for a buffet breakfast...they had just laid it out and the place was empty. Cornflakes first and then, sausages, bacon, pudding, eggs, fried potatoe slices, toast and soda bread. Suddenly baked beans came out, so I lashed back up and smothered the plate in them. Lots of tea and juice too.

Apologies. I don't do it that often.

ooooooooh I had a hotel brekkie too. We went to wicklow. Fab part of the country! Anyway, I don't eat meat and the vegetarian offerings for the hot buffet were not great so I had an egg and a slice of fried tomato. :(

Then I added chocolate crossiant, some cheese and soda bread, a yoghurt and a big pot of coffee. So I was happy with that!

A meat free brekkie in a decent hotel can be great!

I had porridge with mashed banana, spiced with cinnamon, dried ginger and cardamom, topped with pecan nuts and quinoa puffs. It was amazing.

Nothing fancy, just mushrooms in it as I wanted to get the hang of the cooking. Pretty tasty.

What's the point in posting then?

Was walking past the local bakery and the smell drove me in. Vienna roll, avocado and poached eggs.
