    So far today.

    Sausages, black and white pudding, beans and waffles for breakfast.

    A cheeseburger, coleslaw and fries for lunch.

    In between I munched on Lidls lovely dark chocolate digestives.

    Prepping to make a nice hot chilli now. Beer in hand. Hey, its the weekend.:D

    I make it with the leg and thigh , butchers here do huge (well, really big!) ones , and I prefer them over the breast in the casserole tbh :o

    But breast meat is the worst for casserole. Meat on the bone is the best. I leave the skin on too. Enjoy.

    That's what I thought too , but most people I know make it with the breast ! They don't know what they're missing !
    Oh , I leave the skin on too , and just before I dish it up I take the lid off and brown the legs :D

    I have never made chicken casserole (!) so googled a recipe and got this:

    Egg noodles? Cream of chicken soup?? Cubed cooked chicken??? Olives?!

    Americans are weird.

    I put loads of veg in mine , carrots , parsnips , onion , potatoes , the potatoes help thicken it too as they fall apart , try it !

    (I cook spuds too separately don't worry!)

    Yes, exactly. I couldn't do any type of casserole or stew without filling it with veg! (and sneak a few roasties in the oven)

    I made a recent veg soup with carrots, leek, onion, parsnips, turnip (!), courgette, tomato, savoy cabbage... A couple of those chicken stock gel things... And plenty of butter and olive oil, and a dash of turmeric. Oh, and some garlic.

    I was planning on blending it all then adding chicken...

    But it was SO tasty, I left out the chicken.
    And had it nice and chunky.

    The butter and turmeric added a lovely richness.

    Perfect with a dense brown bread loaded with kerrygold butter :)

    Has to be Kerrygold. Sounds lush.

    Funnily enough, it's the turnip and cabbage that makes it good.

    Both things which I otherwise cannot eat!

    Ha , great taste ! I love homemade veg soup too , apart from the courgette , and I've never put it cabbage either , but definitely will try it !

    Oh , and I always put in turnip too :)
