    Chicken wrapped in bacon with a slice of mature cheddar in the middle of the chicken. Mash, peas, roasted peppers and peppercorn sauce.

    The cheese meandered out the sides and kind of welded some of the crispy rasher's to the lower half of the breast of chicken.

    I never ate so slow in me life, it was delicious.

    A cup of tea then and some profiteroles for dessert.

    Pork chop, mash, mushy peas and beans. Delish.

    Satay chicken curry made by moi. Spoon each of sweet chilli sauce, fish sauce and honey. Add a tin of coconut milk, four spoons of peanut butter, salt and some mild curry paste. Blend it all up in a blender and cook the chicken in the sauce until tender. Served with basmati rice and glass of plonk. Delish!

    This sounds amazing! I can never get my attempt at a satay right, the peanut butter always seems to separate and it ends up being really oily :( however I may try your recipe because it sounds delish!

    Fried egg and pumpkin seed bread
    Espresso (Xmas gift coffee machine)

    Have a training day ahead with head office and eggs can be a bit hit and miss with my system

    Had a mixed grill of sorts for this evening's dinner, 3 sausages, 3 rashers, 2 fish fingers, 2 plum tomatoes, a fried egg, 2 slices of crusty white bread and a big mug of tea, lovely it was too.

    Not eating it yet but will be cooking a burger for lunch today the "Gordon Ramsay" way.

    He was on the "Hot ones" show (he was an absolute wuss at it - begging for relief by only the 4th wing pretty much) where he talked about how he makes a burger. He used a whole "stick" of butter in it for one burger.

    Anyway I have everything with me to reproduce it in the work kitchen today. Right down to the Brioche. So bring it on!

    The recipe starts at 8:25 in the video if anyone wants it.

    To accompany dinner tonight I made the gravy (wife did the rest ;)) . roast free range chicken juice, a little flour, salt and pepper, a dash of red wine and homemade chicken stock. I could live on the stuff!

    I made chicken satay, hadn't made it in ages. I used the Paul Flynn recipe for the sauce, no ginger so used some red chili instead. So easy to make and is lovely. Had it with boiled rice.

    Had pasta in sun dried tomato sauce with rashers for dinner.
