Oh very easy. I cooked the bacon, just for a very short while, about 2-3 mins. I greased some cupcake tins (regular size) and shaped the bacon around the tin, it will overlap and that is fine. Crack and egg in the middle and add whatever you want on top. I just used freshly ground pepper.

I baked it around 190C for 15 mins, depends how runny you like your eggs. They hold together very well.

Breakfast sorted for tomorrow now that I have the morning off.

    You had some leftover?

I know! Well see, I had them as a main with chips after a crap cake starter. So I was actually too full eat them all. I have no problem asking for doggie bags in restaurants so I knew at the back of mind that they'd make a nice breakfast! :D

Absolutely divine! I usually grill my rashers so they can sometimes be a bit rubbery. The coconut oil kept them lovely and soft. Nicest breakfast I've had in a while!

^^ you can also make mini quiches thus way with ham or bacon. Just whisk your egg add whatever you feel like feta, pepper ham etc it's a nice way to mix it up when you overkill cooking eggs this way :)

The last few days I've been making banana, egg and oat pancakes topped with peanut butter.

Most years I end up eating stacks of toast and chocolate for breakfast over Christmas.
