The husband made breakfast this morning - blueberry pancakes with homemade lemon curd I had left over from a cake I made last week. The blueberries were cooked in with the batter and they made a very pleasing spurt as they exploded in the mouth. Cough.

There is saying 'never take your kids to the supermarket - you'll end up buying stuff you don't need or want.'

Well a few weeks ago we 'had to buy' two cans of All Day Breakfast because my daughter really, really loved them. (We bought the second one for her brother).

A can of baked beans with sausage, bacon, mushroom and some sort of egg included.

I dished it up this morning with toast- kids wouldn't touch it, Mrs G! and I had seconds! Horrible sh1te!

Cheesy scrambled eggs on a fantastic bagel from Arbutus Bread in Cork. The finished product didn't look too pretty so instead here's a pic of the absolute beast of a bagel, with a (large) egg beside it for scale. I won't need to eat for a week after it.

Black coffee and a huff. Why has the (long, had a couple of days off) weekend forsaken me and gone away?

Mrs. Fox - How do you make the spinach batter?

Mrs. Fox - How do you make the spinach batter?

I handblended a generous handful of spinach with a bit of (almond) milk, then added into 2 lightly beaten eggs. Season.

Made overnight oats and had a little quinoa leftoever so smugly (look at me and all my protein!) threw that in too. Then forget about it for 2 overnights. It got a bit...slimy. Really pretty slimy indeed. Still ate it but not all the raspberries and toasted walnuts in the world could disguise the slime strings.

    No bueno.
