    Toasted soda bread with bacon jam, topped with poached eggs. Will be more generous with the bacon jam in future. :)

    Recipe comes from the Two Rooms In Dublin: Breakfast & Brunch cookbook, which is well worth checking out!

    Cheddar & Rosemary scones:-

    450g plain flour (extra for dusting)
    85g grated cheddar
    60g cold butter, cut into small pieces
    1 heaped tsp baking powder
    1/2 tsp salt
    2 eggs, beaten
    200ml buttermilk
    30g finely chopped rosemary/whatever herb takes your fancy

    1) Set oven to 210c, line a baking tray with parchment paper.

    2) Sieve flour, baking powder & salt into a mixing bowl. Add butter to the mixing bowl, gently working it in until the mix resembles breadcrumbs

    3) Add cheese & herbs, mix well.

    4) All buttermilk & beaten egg to the bowl, mix until combined.

    5) Place dough on a lightly floured surface & fold lightly so the mixture all comes together. Then, either cut it up into individual scones or leave the dough whole & just score/divide it into sections.

    6) Place on parchment lined tray, brush with egg wash. Bake for 18-20 mins or until golden brown.

    Can I ask about the kneading? I've been told never to knead scones because they won't rise. Is it an actual knead, such as I might use my dough hook for, or more a 'just make sure everything stays together' kind of knead?

    It's more of a bringing it all together kind of thing, maybe knead wasn't the right word!

    Oh lads this was delish. So I had lots of roast sweet potato cubes to use up so made a sweet potato and sausage hash topped with a perfectly fried egg. Lots of paprika and smoked paprika in the mix and served with a big mug of Lyons

    Feeling much better this morning after a great night's sleep, so I took time to make a proper breakfast. Buttery scrambled eggs with diced tomato and smoked salmon, and of course a giant vat of tea.

    Flavans jumbo organic oats porridge,with full fat milk,half water,half milk. Boiled for 7 mins.

    Added native irish honey bee honey and some bananas sliced into the porridge.

    A big cup of costa ground bean coffee.

    Greek style natural yogurt, added some kiwi and toasted oats. Also had some freshly made buttermilk scones with gooseberry jam. Bit of a mish mash but delicious!

    Had a friend over for breakfast. Made pistachio and lentil loaf, served with a salad of baby spinach, basil, mint and feta.

    Oh my god, this all sounds amazing! Not keen on raw oats but they're pretty nice toasted. But mainly I'm drooling at the kiwi bit, the Greek yogurt bit and the buttermilk scone and jam bit. YUM!

    I doubt anyone's feelings are hurt. :) So no need to worry about that. But this is a thread celebrating tasty food, there are other threads on other forums that discuss weight loss and calorie counting etc, this is not one of them.

    Who cares how many calories are in the scone, it sounded fecking gorgeous. :)

    For anyone who might be worried about the calorie content of the scone(certainly not anyone in this family :D), they work out at 229 a pop. Obviously the calories in the jam and butter are extra !!
