Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    I made this with grated apple instead of banana and it is really delicious

    Cooking or eating apples?

    If cooking, did you add more sugar to the recipe?


    I made these again today & came out lovely. Albeit recipe is altered enough now not to be original recipe.:rolleyes: I had 5/6 bananas that were black with ripeness so ideal for this.
    I doubled the recipe, but only put in half the walnuts - that seems to be perfect amount. I also used less margarine, about 4ozs less over the double, & less sugar also.
    Of course putting them into muffin cases.

    Made it a few weeks ago. Used hazelnuts instead of walnuts and it was delicious.

    Just put another batch in the oven about 10 mins ago. After cleaning up, I noticed I forgot the cinnamon:mad:

    Hopefully it will be edible.

    I've been making banana bread every week for the last few weeks, I hate nuts, so instead of nuts I've been adding either a punnet of blueberries, or strawberries - I have a new love for banana bread (I'd actually never had it before lol)

    Likewise, I never had it before and only made it because it seemed interesting. Since I try to avoid wheat/bread in general, I look for excuses to make this.

    Last batch, I made slightly too much mix so put some into 3 muffin cases, intending on giving them to my house mates. Once they cooled down, I couldn't resist and scoffed them :D

    I love this recipe. I used sweet potatoes instead of banana the other day and it was really nice. Next time I'm going to try courgettes

    Did you cook the sweet potato first or just grate it into it.

    I've been using this recipe with years and never tried it with anything other than bananas. I've bought extra apples this week to try them but intrigued with the sweet potato idea.

    Made this again today since I had 3 black bananas handy. Baked it in a 30cm loaf tin (I dunno how many lbs this is, just says 30cm). Used butter instead though. Lovely.

    Just went into dealz and got a loaf tin, bananas are going black at home and will be getting the walnuts and some other ingredients I'm short tomorrow. Looking forward to it, I've never made banana bread before or even tasted it so can't wait to try it.

    So I finally got around to making it today, lovely easy recipe, only had 2 small bananas as the 3rd was a little two far gone, definitely needs the extra banana, love the walnuts, gives fantastic texture, like little surprises, oh I also forgot to get brown sugar so used white instead doesn't seem to have ruined it or anything. As I live alone I think that I will have enough banana bread to do me until Xmas, one and a half loaves are gone into the freezer.

    Great recipe, highly recommend!

    Have made these a few times - but never posted up the results! Great recipe OP. I have tried a few different recipes and this is the only one I've found which doesn't leave a soggy bottom for the muffin cases.

    I need to find that out myself! Have just run out of them. My wife swears they were from a homeware place near st. Stephens Green, but I have doubts. If I remember I'll let you know!

    Definitely going to do one loaf and the rest as muffins next time, muffins much handier for taking for lunch, they are so pretty!

    You can get the cases in kitchen compliments on south anne street in Dublin. I have gorgeous teal and white checked ones :)

    Going to give these a go over the weekend I reckon!

    I'm pretty useless at baking but made this yesterday and it turned out perfect:) if I do say so myself!

    Just took half a loaf out of the freezer yesterday as I felt like something cakey, just had some there now, it freezes incredibly well!

    I would often have a batch of buns/muffins in the freezer , real handy for unexpected visitors. Stick them into the microwave or just leave them out to defrost.

    Made muffins from the recipe today - cooling at present. I used a mix of gluten free four/oat flour, and doubled the baking powder. Also used butter. Didn't have enough walnuts so mixed in some hazelnuts. Smell delish.

    For those that care, I've made 12, they work out at about 350 calories each :eek:

    Would you call it a tea cake?? I just like a slice with a cup of tea but my sister likes to toast it with butter.

    Back after using the caster sugar instead of brown even so the muffins and bread look and smell amazing. Can't wait until they cool.

    I've used caster and/or brown sugar when making it and I never really found much of a difference.

    It's not really a bread as such I find it is more a muffin texture.

    It's a cake. Usually sweet and light, and best served with a hot drink. It's a tea loaf, as has been said, as opposed to a dessert. It's great and you can have it just how you like it, too. I like to throw in dark chocolate and glacé cherries.

    Girlfriend made this last night, kitchen smelled unreal after it and (from what she told me) it was easy to make.

    All I know is that it is delicious with a cuppa tea! :)

    BigRon thanks for bringing up cool zombie threads, I love banana bread, there was/is a bakery on Moore Street called the Paris Bakery where I got it first and the bread was demolished by my family. I'm gonna bake this tomorrow :)

    Bigron, not yet, i waited for the bananas to go off so I could mush them down, but they were scoffed before hand, will try again over the weekend

    Just chowing down on a mini loaf of this now :) It is yummy! And very forgiving because it was still yummy even after I messed around with the ingredients a lot (more bananas, less sugar. Walnuts swapped out for peanut butter chips and nutty granola, loads more cinnamon). And it was super easy to make. And no one else in my house eats banana bread. Life is good!

    Love the idea of a the granola, never added that, choc chips have been a recent addition to some of mine.
    For anyone looking for gluten free, I've now this using aldi self raising gluten free flour and perfect results

    Thanks for a great recipe. I made it in two tins. One hour and it was a bit under baked. But it was nice and on the moist side, which I prefer to dry banana bread.

    Mine didnt rise as much as yours I may have waited to long between finished mixing and traying up / not enough baking powder / and I smoothed my mix in the tray with a cake pallet.

    Definitely going to stick with this recipe though.

    Used butter instead of marge, and added sultanas, super easy and nearly gone now, light and moist

    I've made it again with smashed up cooking chocolate, which was delicious. Is there a reason why you use cooking chocolate? Is it to do with sweetness, price or does normal chocolate denature or something when its cooked? I was thinking of chucking in a some pieces of Cadburys caramel and was wondering is there any reason not to do it ? :)

    I could be wrong, but I see no reason not to use normal chocolate. I use Cadbury's chocolate for my chunky choc chip cookies. I also added chopped fudge once or twice but it made them far too sweet, so if you're using Cadbury's caramel maybe reduce the sugar.
