You're not in the company long enough that leaving them out of your CV in future would matter, in this climate a gap in employment record is normal.

Depending on the area the current company work in, given the size of Ireland, people in the new company may have links to people in the current one. You should take that into consideration, into what you tell people in the new job, and on your CV in future.

I'd refused to go to the meeting, if it's designed to shaft you, delay it by asking for all the information to be given to you.
Do not tell the current company hr, or anyone else, anything about your new job. Refuse to engage them on that topic, say you're taking timeout to relax. Do not tell them anything about your plans for the meeting, who you'll be bringing until you have no option, i.e. as you enter the room.

Depending on how secure the offer with the new company is, and you've signed contracts, and there's no subject to references etc, you could go to your do for a sick note for the stress this is causing you. Apply for holiday leave, if you have days left.

Basically do anything to stall the meeting, until the meeting cannot occur.
