A dead mans hand is AA88 all black, but I think that's someone else.

You have 90% of the answer. As Corkgirl might say - "Dowcha boy" :D. All that remains is the hand (or, more correctly, the bid).

    The bet was his 'poke'

I think I'll make it a spread missaire (no idea how to spell that), said dangerous Dan McGrew.

I have no idea if that is the answer, but it was one of my husband's favourite quotes when anyone said 'I think...'

A spread misére is when the dealer plays with his hand showing.

That was reputedly the hand held by Wild Bill Hickok when he was shot in the back.

Nope. The "poke" was the bag of gold-dust held by the stranger.

Nearly right. A "spread misere" or "mis ouverte" is a bid that undertakes to loose all tricks played with the bidder's hand showing.

That was Wild Bill Hickok, or as my classmate in national school in the days when kids read comics called him, Wild Billy Haugh.
