    Savoury French toast. A favourite for a weekend breakfast.

    Almond milk, chickpea flour, soy sauce, nutritional yeast, garlic and onion powder, mixed herbs, salt&pepper and find some bread that’s at least 2 days old.

    This is just amazing. Have altered the recipe a tad after the first time I cooked it.

    Served with steamed kale and broccoli. The rice is a mixture with quinoa. I just add a half a cup of each in to the rice cooker and it’s simple as.

    You won’t fail to impress with this stroganoff.

    Hope you make it to the last photo because I think it also looks great on a plate.

    I made a creamy pasta bake using the Emlea plant cream. We had enough left over to put with some apple crumble and its just as good as the real thing. The non vegans tried it and said they couldn't tell it wasn't milk based.

    Cashew cream is so easy to make and it’s amazing.

    Very versatile and I make it thick or runny depending on what it’s needed for. It’s also easy to flavour in any way you want.

    We always have about 1kg of raw unsalted cashews knocking about. We use them a lot.

    These are well worth the effort.

    I’ve altered the recipe, as always, having made them before.

    My biggest tip - don’t put in ANY chili powder and 2 tablespoons is a crazy amount anyway. Instead I use 1 of a teaspoon of chipotle.

    I also added a beyond meat type mince.

    These are time consuming but well worth the effort. Just stick on a good album and pour a glass of wine and enjoy the process.

    Started a one week challenge with deliveroo yesterday, where they get me to eat vegan options for a week for veganuary.

    Pictured is the Mucho Vegano bowl with vegan chorizo with added pineapple, and the Chili del Rey tacos which come in blue corn tortillas, from nutbutter.

    Secondly the vegan bento box with teriyaki tofu, noodles, gyōza and avocado sushi. I also ordered additional various sushi including tofu inari, nigiri and avocado futomaki.

    Dinner today is a home-made shepherds pie made with quorn mince, in the oven as I type.
