Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Apple tart from the windfalls! I am crap at baking cakes/bread as they either never rise of just don't taste right but the one thing I can do well is pastry :D

    If anyone would like some cooking apples in Dublin just give me a shout and I can bring up a bag of them when I go up again. Although I don't know what the apple tree pollinated with this year, there's a lot of red showing on the skin.

    Was my OH's birthday. Made a chocolate cake with salted caramel swiss meringue buttercream, chocolate ganache, and honeycomb bark.

    It's the most beautiful looking cake I've ever seen. How long did it take you to do? I'd love to hear the process (not necessarily the recipe as I'd never have the ability to do it)

    And here was I, coming in to say that I'm gonna try make butter biscuits with the toddler today. :o

    Tbh it took too long. I made the salted caramel and the honeycomb the day before I needed them.

    I started baking the chocolate cake layers at 10am. Had to do 2 at a time because my oven isn't great. I had to let them cool completely (this is something I never too - I'm always too quick to start messing with them).

    Then I made the swiss meringue buttercream and added about 4-5 tablespoons of the salted caramel at the end.

    I should have made the chocolate ganache at this point but I wasn't thinking straight and made it much later.

    To assemble I cut the layers of the cake to make them as even as I could. Spread the buttercream on them and then crumb coated the whole thing and put it in the fridge for 2 hours (a freezer might have been better!). Made the chocolate ganache (2:1) and then covered the cake in that. Poured the remaining caramel over the top. With the leftover buttercream and ganache, I did some piping and then put the honeycomb bark on top.

    Yeah I made biscuits with the toddler. Between wrestling raw egg off him while he tried to eat it, him trying to put oregano into the dough and then him getting bored it was a disaster. Funny, but a disaster.

    Aaaand I misread the recipe and used about a third of the butter I should have. So after all that the bikkies are dry and way too sweet.

    Lined it with tinfoil anyway. Pulled out no problem.

    It's the baby's christening tomorrow and we are having the celebration at home. The hot food is being catered but I'm doing the sides, desserts and christening cake. Over the last few days:
    1 x Carrot cake complete with orange cream cheese icing
    1 x 3 layer coconut and lime cake (christening cake) I'm just after finishing the decorating. I don't know how to post pics on the phone.
    2 x apple pies
    1 x apple and blackberry pie

    Still using up apples so I made apple & cheddar scones yesterday. I couldn't get any taste of apple but the texture was lovely, very light and fluffy on the inside and sharp tang of cheese.
    Made 10 and when I went to get a photo there were 4 left :eek:
    Not normally something I'd eat with scones but they were yummy with ripe tomatoes!

    I made this for my boyfriends little sister for her 21st. It's a chocolate biscuit drip cake with Nutella buttercream. I weighed it before I put the chocolates on top and it weighed 8.5lbs! They'll probably be eating it for the next year!

    I made an apple treacle tart yesterday. By the time I thought of taking a photo, it was half-eaten. It's not much of a looker anyway, but it tastes just right :D

    I had a craving for chocolate cake and vanilla ice cream today but didn't have time for the whole nine yards (mixers, weighing scales, ovens, preheating... etc) so I "baked" a Chocolate Mug Cake in the microwave. It hit the spot just right. Warm, chocolate and almost gooey in 1min and 40 sec.

    It is the best one I've tried. I've found that any microwave cakes that contain eggs have a very tough and almost chewy consistency. The addition of Nutella in . this one adds a nice touch.

    I would have added a bit of coffee into the mix to further appease my caffeine addiction but the smallies in the family wanted to share...

    Reduce the temperature a little (10 degrees) I always have to do this with older recipes that assume a conventional oven. This can combat the problem of things cooking too quickly on the outside while still being doughy inside!
    If it's an ongoing problem it might be helpful to buy a cheap oven thermometer - my old oven was very inaccurate towards the end of its days so this helped a lot.
    Other than that, for dense cakes I'm always prepared to cover it with a couple of layers of tinfoil (or a tinfoil ring to prevent pastry scorching) towards the end of cooking.
    Don't pay too much attention to the suggested cooking time in recipes though - theyre only a guide and every oven is different, so test with a skewer or wooden toothpick and if it comes out with batter on, whack it back in for another few mins and test again.

    I baked an Angel Food cake last week (too late for pictures now but next time) and instead of the usual fruit salad, I made a bowl of Roasted Strawberries from a recipe that arrived in my inbox from Epicurious. The combination of light vanilla sponge, roasted strawberries and whipped cream went down well and no leftovers. Damn.

    I made a pear & almond cake yesterday. I was too lazy to line the tin properly, I just shoved in a big circle of parchment and the creases caused indentations around the edges.

    I used a mixture of Aldi's Dairyfine dark and milk chocolate, two parts dark to one part milk.

    Hi Lisha,
    Thank you, its one the family uses, very simple :)
    night before, or a couple of hours soak a good handful of sultanas in hot tea,with a teaspoon to sugar.
    then.
    450g plain flour,
    I teaspoon of bicarbonate of soda
    1 teaspoon of salt
    1 egg
    Buttermilk
    preheat oven to 220c
    strain off sultanas
    sieve flour, bicarb,salt into bowl
    mix sultanas in well till all coated in flour
    add egg and a small bit of buttermilk to break egg up, ( or you could mix egg with buttermilk first, but for me the less washing up the better :) )
    then add enough buttermik so you a a soft dough, turn onto floured board and shape, I use a 9inch cake tin, as like to make a couple at a time, one for freezer, but you don't need to.a baking tray dusted with flour,
    cut top, sprinkle little flour on top. into oven
    after 15 mins turn oven down to 180, bake for about another 25 mins, or untill done, :)
