Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Hey I was wondering is there anywhere I can get knives for work either a set or buy indivualy, don't necessarily want to buy online. Would like to see the knives before I buy.. Preferably Dublin, kilkenny or Waterford

    +1 for TK Maxx. I got a very sharp knife there after Christmas. ambition.pl

    gosh it's sharp, I've cut myself twice already by accident....

    I wonder if these knives that are on offer in Supervalu are likely to be reflective of the price they're selling them for, or would they be worth picking up a few at that price?

    I would try the Supervalu ones, can't go wrong at that price. I like that they don't have the bolster coming down onto the heel of the blade, they don't mention the steel grade, but any reasonably thin stainless should work. They may need more frequent touch ups, or a convexing to hold the edge, but the handles look comfortable and the blade shapes are good. I'd probably go for the larger Santoku, Chef's and some paring knives. If they are no good I could use them in the garden or something....

    For a bread knife or carver I like the henckels but for a chefs knife I like the Wursthof . For a smaller tomato knife I suggest the Victornox which are very cheap. Tk maxx sometimes have greeeat bargains

    I bought the large Santoku knife the other day to see what it was like. The cashier gave me about 10 billion stickers so I had plenty to just go and buy it there and then. It was only €4.99, reduced from €36.99 (or thereabouts), but I doubt it's worth that much.

    It feels nice, and I like the dimples in it that stop the veg from sticking. Could definitely do with being re-sharpened as it doesn't seem very sharp, or at least nowhere near as sharp as my Wusthof knives.

    "T074A China" is printed on the blade, if that means anything to anybody?

    You can remove Kitchen Compliments from the above list, They had moved to bigger premises in Anne St, opp Sheridan's, and unfortunately closed the doors last august. So, the really nice Ann Mc Namee is now reading all the cookery books she collected through the years, and probably making some nice creations...:)

    I wanted to get a Dick Splitter, but I ended up getting from a few 2" Dicks up to the 14" Dicks Chef style, 12" American Butcher knife, 10" Utility, 9" Trimming Knife.

    The two 14" Chefs knives are basically cutlasses, and sometimes it's fun to pretend Zombies...

    These are actually huge knives, I have smaller garden tools!
    I do have smaller knives, proper Chef and Boning knives, these are just for fun.
    On the plus side I chopped up a lot of chicken tonight.

    The excellent local Dawn Meats Abattoir has a shop where we can buy sub-primals, so my excuse for these is cutting steaks from full sirloins or fillets.

    Inch and a half to Two Inches per steak, freeze the extras, quick fry the rare meat.

    I am a CFR-A and hope to qualify as an EFR later this year.
    I also nick myself lots and kids plasters make the hurt less.

    I do also have two kids and various Nieces/Nephews that sometimes need patching.

    Mostly it's me, poking holes in me...

    Thanks Miss Flitworth, I find their plasters great and having lots on hand is really useful with smallies.
    A plaster makes the tears stop even if there's no blood....

    They rank up there with a blast of cool pops in the Freezer for treating split lips, bitten tongue/cheek or scalded mouth. :-)

    Have to give it to McDonnells, a very nice lady called Rose rang me to let me know the 12" American Style was only available with a red handle, and to check if that was acceptable.
    Since these were for home use and not Abattoir/Restaurant use that was fine by me!

    The size of these knives may tempt to use them as cleavers, that would be bad.
    The edges and taper are as for a knife, these are for long slicing cuts, not whacking bones with.

    I know my boning knife is plenty good enough for the job, but I like the idea of using these for fabricating Primals/Sub-Primal Cuts into fridge/freezer ready cuts. They may well turn out to be too long for anything except maybe beef, but I have high ho[pes for the Scimitar shaped knife, the deep "trimming" knife and the Serrated Utility blade.

    4- PC - Santoku Knife set

    According to TK Maxx it was reduced from 127 euro to 26

    I think what I got was this one linked which may cast doubt on the price TK-Maxx claimed but seems rare enough to find it at that price level

    JapaneseChefsKnife is the only place to buy your knife.

    They literally have knives to suit everyone's budgets and delivery is extremely reasonable at around $7, plus it took no more than 5 days (no working days) both times I've used them.

    This is the most used knife in my kitchen...followed by a Watanabe Santoku.
    I must get a big Gyotu again, I like those too.

    Bought the leg for €60 and they'll give a text message when it arrives in store. A friend of mine bought one back in March and its still got some meat on it, and is still delicious.
    Can someone recommend a knife? I thought one of my sharp knives would do it, but he recommends a skinny long knife, anywhere in Dublin I can get one?
    I don't mind paying for quality.

    Cheers guys, went into TK-Max and they had a couple for a tenner each, which seems quite cheap , I'm a firm believer in buy cheap buy twice, so, (thanks for the links by the way), I was thinking of going for this Victorinox slicer, its a blade my butcher uses, but not sure whether its skinny/flexible enough to be slicing wafer thin pieces of meat off a cured leg. (I think it has to be non serated too)

    I've been watching this, lovely stuff!!

    I have a very similar knife that I use for carving roasts. The brother in law (who's a chef) brought one up to the folks house one Christmas and I was blown away at how well it carved the turkey and ham so I ended up getting one. It slices the meat very thinly but I'm not sure it'd be able to slice Jamon thin.

    you might be able to use parcel motel.

    I was looking at various penknives and many would not deliver.

    Parcel motel had loads of trouble last year as so many people were using them.

    Ah, sorry didn't spot that. I didn't actually buy them because I got a set of Wusthof Ikons as a present, I know lucky me, this year so can't really justify it. Parcel Wizard from DPD might be worth a shot this year as you get 3 free deliveries between now and xmas and they can deliver to your door if you want

    Looking at getting a set of kitchen knives. Was leaning toward a Sabatier set I saw. A bit of digging has revealed that "Sabatier" is not a brand as such as the original developer never trademarked the name. I set I was looking at is made by a brand called creative tops based in the UK creative-tops.com

    Any other brand worths considering Zyliss, Taylor eye witness, James Martin Stellar?
    What should I look for in finish. Previous knives have been the cheapest I could find but have been gifted a voucher for Christmas and looking at either a good knive set or a proper saucepan set.


    Might ask seperately about saucepans.
