    Grilled a few slices of crusty white bread, rubbed with tomato and garlic and drizzled in olive oil, and a little Serrano ham on top. Simple but so tasty!

    I would advise not frying eggs on a Foreman stone pan, silly me. I usually go for poached eggs on brown toast. I vote Mrs Fox for breakfasts of the year award.

    What ratio was egg to banana Mrs. Fox? They look really good and I always fail when it comes to pancakes.

    As suggested by a poster here somewhere use only a tablespoon per pancake, or you won't be able to flip it without breaking.

    Edit: I should add - it's best to mash the banana and then break the egg in and mix. Lumpy mixture makes the best pancakes.
    1 egg + 1 banana make 15 tablespoonfuls of 2.5" pancakes.

    Double edit! Sorry ! I meant 1 egg + 1 banana = 7-8 tablespoonfuls of 2.5" pancakes!
    I always double the ingredients when I cook for myself and kids!

    I have to thank you for this! It's the perfect post workout meal so I'm after scoffing some after a tough bootcamp.
    I tried it with maple syrup and with peanut butter and I think I'll stick with the peanut butter.

    Another question about those pancakes, Mrs Fox! Have you ever made the batter in advance and left it in the fridge for the following morning? Or made too many pancakes and put the leftovers in the fridge? I'm supremely lazy in the morning and was considering making batches on a Sunday to do me until maybe Wednesday, but only if they would keep well enough.

    I've never made the batter well in advance but I'd imagine it would discolour? I don't know if the taste or texture would have any effect though.
    I'm sure you can freeze leftover cooked ones, and pop them in the toaster to reheat. I read somewhere here a poster did just that.
    It only takes a minute to prep them fresh, it's the only way I'd go.

    Peanutbutter banana bread with chocolate chips, fried in a pan coz it crumbles in the toaster (needs defrosting as the loaf is sliced then frozen)

    Don't get too excited now folks. I slept in this morning and was in a rush. Only managed to sit down for green tea and a banana at the local cafe.

    Sorry for the blurry photo. I've been experimenting a lot with pancakes lately. The last couple of days I've been making matcha green tea pancakes, based on the banana-egg ingredient some genius poster had put up here in the forum (was it Bazmo? Thanks!). I added a tsp of matcha powder diluted with 3 tsp of almond milk. A bit of vanilla extract (next time I'll try vanilla pods) and sea salt, 1 egg + 1 mashed banana. Made 8 petite pancakes. Served with maple syrup and pecans.
