    Just heard the FIL, who lives in the U.S., may be coming here for Christmas.

    Was cooking pork chops in my philips airfryer. I like the fat well done and do not like the way they sometimes curl up where the fat is.

    I got a good scissors and snipped the fat all around the edge at 5mm intervals.

    like this but with far closer cuts, its really quick with a scissors.

    It came out really well, the fat renders off well and was left crispy all around the edge, it all shrinks evenly so does not curl up the meat, its like all these spokes sticking out. 10mins at 200C, after a preheat.

    My godmother used to bash it closed with the back of a tablespoon... usually the one she'd just used to scoop out the golden syrup! Things were sticky in her house :)

    It varies from year to year. It's the 21st this year, 20th next year and the 21st again the year after :D

    Hello, my name is MissFlitworth and I now own TWO waffle irons. I had one that did circle/heart waffles and, obviously, needed one that does deep, rectangular Belgian style waffles. Of course. For all the waffles I eat. Which is definitely more than once every 6 months. <shifty look>

    So the chicken I bought for dinner tonight is, em, pretty hairy. I think whoever plucked it did a super half assed job. Like, have obviously had the occasional missed pin feather but this bad boy could do with a trim

    Hi all, long time no talk.

    I posted here awhile back saying I sold my old place to take a position as an executive chef instead for another owner.

    Best decision of my life. Cooked for Depeche Mode two weeks ago and ended up in a bar with them until 9am the next morning. What is life.

    Everything.

    Im working with a lot of great cooks and we are experimenting with a lot of molecular recipes and basically bat-**** crazy stuff :D

    Its the most fun I have ever had working in a kitchen. This weeks menu has Smoked Mackeral ceviche cured in a lemon and bitter chocolate pickle.

    "Blood Bread" - Picture normal loaf of bread with a gooey black pudding centre.

    Black Garlic mousse served on Black Angus tartar topped with burnt artichokes.

    A lot of fun.

    For those in the North Dublin/Fingal area - Fingal Festival of Food is on this weekend in Newbridge House near Donabate.

    Am hoping to get along myself on Sunday. Word on the street is that one of the brewers there is a boardsie. :)

    Were you at this before? I'd like to go and bring the little fella so wondering if the exhibits and stalls are spaced out or close together. Pushing a buggy around some of the summer events in the city can be a nightmare for both people with babies and people without trying to avoid them, not pleasant for anyone.

    Sorry BC - I have no idea. However, most areas of Newbridge house are quite spacious & this is billed as a 'family-friendly' event.
