    I learned an amazing trick for really great hummous. Peel the chickpeas. It takes it to another level.

    It takes about ten minutes while watching tv to peel a can of chickpeas. Then I blend until smooth, adding olive oil, crushed garlic, tahini, lemon juice and salt, and if I'm feeling festive, maybe some cumin and fresh chopped coriander. :)

    Eaten smeared on crusty fresh bread, ya can't bate it.

    My local fishmonger had ling on special today so we came home with half a kilo of gorgeous looking fillets. What's the best way to cook them - just pan fry on a fairly high heat? I've never had ling before, let alone cooked it.

    Rick Stein has a fantastic recipe using ling, turmeric and dill in his Far Eastern Odyssey series.

    Careful with them knives and various burn-y things! Kitchens aren't the best fun to be in when you have the exhaustion spinnies.

    Forgot my lunch today. Which means I have to go to...the shops.. den den DENNN. Is this going to be a slippery slope back into the land of spending €11 a day feeding myself coffee & burritos? I'll have to walk past the place that does the peanut butter s'mores and all. C'mon willpower.

    I did it! Came back with only the item I went out with, even though the salad place had salt caramel brownies from Wildflour bakery right beside the till.

    Ooh... Peanut butter s'mores? Where sells them?

    In Dublin I pick them up in Eathos on Baggot Street. They are AMAZING. Buttery biscuit, peanut butter, a marshmallow cream, dark chocolate & honeycomb on top.

    I got some cod fillets today, hoping to do them tomorrow or Friday, was thinking of putting a light coating of breadcrumbs on them, good/bad idea?

    Any suggestions for a nice white sauce to go with them?

    Breaded cod sounds good to me.

    What about making a Tartar sauce?

    Mayonnaise with capers, gherkins and onion/shallot chopped into it, thinned slightly with lemon juice.

    It goes lovely with vinegary chips too.

    Whats the best way to reheat a baked potato? Any chance i can get the skin crispy like it was last night?
    I was going to hollow it out and make mash with bacon and onion and cheese in it and rebake it.

    You could put the empty skins in the oven for awhile before you put the potato back in. That should help crisp them up a bit. I love twice baked potatoes.

    Thanks, good idea to crisp them up a bit before stuffing them again. I usually do them that way and they are delicious, but fresh from baking the skins are already crispy. I also usually eat 2 big potatoes, but in the interest of being (relatively) healthy i went with one last night...i'm not used to leftovers!

    I bought a pack of 5 cod fillets (frozen, natural fillets; no crumbs or batter) in Tesco the other day and I'm a bit stuck as to what to do with them.

    I find cod a bit bland but I'm determined to do something tasty with these...any ideas?

    The frozen ones are great as they can be cooked straight from frozen, and that's what appealed to me.

    If you can suggest something nice, I'd be so grateful!

    Bake like hake, sprinkle of herbs and a glug of olive oil, 15-20 minutes (more from frozen) in a 200 deg C oven. Serve with sparkling steamed veg or a salad.

    I sometimes chop tomatoes and scallions or onions, mix it with grated cheese and breadcrumbs then pile it on top of the fish and bake it. It adds flavour and texture.

    Picked up a pack of Lamb mice today as it was going cheap in Waitrose. Then realised I don;t know what to do. I was thinking Shepard's pie or burgers but I'd rather try something special.

    Any suggestions folks?
