For €19.99 it is not a bad starter set. Just don't expect them to last a lifetime.

There's a shop in Kildare village that specialises in knives. Not sure of the name though.

Any particular brand in TK Maxx to look out for ? Looking to spend around €80 so open to recommendations.

I wonder if these knives that are on offer in Supervalu are likely to be reflective of the price they're selling them for, or would they be worth picking up a few at that price?

For a bread knife or carver I like the henckels but for a chefs knife I like the Wursthof . For a smaller tomato knife I suggest the Victornox which are very cheap. Tk maxx sometimes have greeeat bargains

You can remove Kitchen Compliments from the above list, They had moved to bigger premises in Anne St, opp Sheridan's, and unfortunately closed the doors last august. So, the really nice Ann Mc Namee is now reading all the cookery books she collected through the years, and probably making some nice creations...:)

I wanted to get a Dick Splitter, but I ended up getting from a few 2" Dicks up to the 14" Dicks Chef style, 12" American Butcher knife, 10" Utility, 9" Trimming Knife.

The two 14" Chefs knives are basically cutlasses, and sometimes it's fun to pretend Zombies...

These are actually huge knives, I have smaller garden tools!
I do have smaller knives, proper Chef and Boning knives, these are just for fun.
On the plus side I chopped up a lot of chicken tonight.

The excellent local Dawn Meats Abattoir has a shop where we can buy sub-primals, so my excuse for these is cutting steaks from full sirloins or fillets.

Inch and a half to Two Inches per steak, freeze the extras, quick fry the rare meat.

I am a CFR-A and hope to qualify as an EFR later this year.
I also nick myself lots and kids plasters make the hurt less.

I do also have two kids and various Nieces/Nephews that sometimes need patching.

Mostly it's me, poking holes in me...

Thanks Miss Flitworth, I find their plasters great and having lots on hand is really useful with smallies.
A plaster makes the tears stop even if there's no blood....

They rank up there with a blast of cool pops in the Freezer for treating split lips, bitten tongue/cheek or scalded mouth. :-)

Have to give it to McDonnells, a very nice lady called Rose rang me to let me know the 12" American Style was only available with a red handle, and to check if that was acceptable.
Since these were for home use and not Abattoir/Restaurant use that was fine by me!

The size of these knives may tempt to use them as cleavers, that would be bad.
The edges and taper are as for a knife, these are for long slicing cuts, not whacking bones with.

I know my boning knife is plenty good enough for the job, but I like the idea of using these for fabricating Primals/Sub-Primal Cuts into fridge/freezer ready cuts. They may well turn out to be too long for anything except maybe beef, but I have high ho[pes for the Scimitar shaped knife, the deep "trimming" knife and the Serrated Utility blade.
