How to be organized - training & diet

This summer's been good as I've been off college and have had loads of time to devote to training at the gym & keeping track of diet/nutrition… In September when things start to get crazy busy again, I was wondering how most of you keep organized with everything - when do you get to the gym - do you go at different times whenever you get a chance, morning sometimes, evenings other times, etc. & do you prepare meals & bring with you, or what if you're not home til late & don't want to eat too late - how do you deal with all of this? I really wanna keep on track… I'm cutting at the moment but soon I'm gonna start bulking and this needs to stay on form for the new few months & I don't want it to waver. Tips?

I work 12 hours a day 5 days a week and a handy halfish day of 7 hours the sixth. This requires a lot of planning ahead. I cook half a weeks meals on the Sunday and then the second half on Wednesday. For the gym I go straight after work. It's much easier now that I don't have 13 and 14 hour work days. But even then I just managed with shorter gym sessions. Have a few handy meals you can prepare fairly quickly that don't require a lot of thought. Like some chicken and spices thrown in the oven with some sweet potatoe chips or something. You want to keep prep time low for the very late days.
