    I'm with the in-laws this morning after we had dinner together last night. The ratio was roughly 2 parts food to 5 parts wine :/. I am not well at all today. But the food was delicious! Roast leg of lamb, can't beat it.

    Home to the folks for the weekend. My mom was working this morning so I took on the Sunday roast. Pot roast beef done, mash done, just the peas and yorkie puds waiting til she lands. Very pleased with self so far - but the proof will be in the pudding! Cross yer fingers lads!

    Well, I did the sweetbreads for lunch.
    Pleased to say that I really liked them - not blown away by them or anything but I enjoyed them would cook them again. And most importantly, Mrs Beer liked them - she's had them before and reckoned they were nicely done:D

    So I went for a trial in one of Gordon ramsay's restaurants yesterday (not a Michelin starred one) for a demi-pastry chef job. I got offered the job on the spot. It's about six grand more a year than I'm on here. I'm moving to London in a month. Fúck.

    Forgive my ignorance of commercial kitchen hierarchy, but what is a demi-pastry chef exactly, or a demi-"any kind of chef" for that matter? Oh, yes, congratulations too!

    The levels of chefs go:
    Commis chef (trainee)
    Demi-chef De partie
    Chef De Partie
    Senior chef De partie
    Sous chef
    Senior Sous chef
    Head/executive chef

    So basically it's what you get when you're just finished your training, usually looking after a section but you would have someone above you for advice or help. It's the first role where you get a bit of responsibility and accountability.

    I've had a cold for over a week so lorrying lemons, ginger and honey into me like there's no tomorrow. And since I have no energy to do anything, I'm researching cafes and restaurants for all my upcoming trips. Including my holiday, which isn't until November :pac:

    Huge congrats Pigwidgeon! Brilliant achievement.

    An achievement on a much smaller scale: my roast dinner was a roaring success. Clean plates all round and massive brownie points to boot ;)

    Has anyone seen those Super Valu posters around the place about Dublin joints? I wonder if the person who signed off on that language still has a job.

    Also, for those of you with fan hob/extractors - is there much maintenance involved?

    I'm away on my travels in September and I'm already being an absolute pain in the ass about places we'll eat. The horror is that there are more places than available eating slots :(
