    Ok so I finally got me some shin beef to make a curry!! So now I need a delicious recipe!! Hit me with the good stuff!

    Vindaloo, maybe?

    I would adjust the cooking times & temp though to get the best out of the shin.
    Cook on 160C for 90 minutes, then add the spuds & cook for a further 80 mins at the same temp.

    There is a fantastic beef rendang recipe on here somewhere if you search.
    Shin is ideal for this.

    I made a couple of jars of red onion marmalade at the weekend from an Aldi recipe someone posted on this forum, just had some now in a sandwich, it's lovely and flavoursome!

    Check out the different curries in The Cooking Club. Some are quite foolproof if you take your time & follow them step-by-step.

    Sure. Maybe try a squeeze of lime instead for the sourness. If you don't fancy that either - no big deal.

    I'm cooking a big pan of chickpeas, kale, roast sweet spud, chorizo and caramelised red onion, flavoured with ginger, cayenne and lots of black pepper, for lunches.

    I'm making brown bread and a big pot of vegetable soup with barley to keep me in lunches for the rest of the week. So far we've bought very little meat and are eating our way through the freezer for January.

    Are you using curry powder? I've never in all my life tasted a nice curry made with curry powder. There are some pretty good pastes available or, even better, get yourself some fresh whole spices and a good recipe.

    You could make it without but I would urge you to try it with. There is no one feature spice in this recipe. Rather they all blend over long cooking into an overall flavour without any one spice standing out. It's such a good curry.

    Is there a cheapie / budget cookery thread anywhere that I can't find - I can see the sticky but the links are all to old threads?

    Anyway, the BBC just sent me this - Budget cooking and I thought it might be good inspiration for people for January.

    I like the blog "A Girl Called Jack", she's a single mum who started a blog to show how to eat well on a limited income. There's some great recipes on there.

    Anyone get those days where you just couldn't be bothered cooking? :(

    Today is the day. Don't know what it is and I know I'll be rearing to go tomorrow. Perhaps it's that I haven't drank much since Xmas (easy fix :).

    Anyway, I was inches away from buying a microwave meal in Tesco this evening (they have a hoisin duck that's amazing to be honest, and the healthiest list of ingredients I've even seen). Anyway I persevered. I'm making chicken & muchroom pie from the bbcgoodfood website. Hope it turns out ok.

    EDIT: just looked out the window....full moon, that'll do me for an excuse!

    I felt exactly like that and I bought a burger and made chips. Chips out of a packet and the burger was from Supervalu.

    And this is how I feel about it. :P

    Well Wednesday is the toughest day of the week for me, I had cottage pie to heat up though. It's so good.... Of course I also have what's left of the bottle of cab sauv from the making of the cottage pie :D

    I have changed my mind. I bitterly regret having eaten that burger. How much salt do they put in those things?

    I have drunk the best part of a litre of water since dinner and we all know what that means... if anyone wants to chat at midnight, three am and again at six-ish, feel free, I will be up. :mad:

    We've had the same meals today :D. I made a thai red curry with chicken thighs, cooked low and slow. Served with rice, but sadly no oven chips.

    Loire - I'm having frozen Lidl Bami Goreng right now laced with jalapenos, feta and, em, jalapeno brine (I'm gross). Everything was just too much hassle tonight.
