    My ray, potato and Jerusalem artichoke croquettes are done. I had the lot formed, breaded, browned in hot oil, put in the freezer and everything cleaned up in an hour (cooked my chicken thighs in that time too).

    Of course, I had to taste one. :D Very good, I must say. All the flavours coming through - ray, artichoke, garlic, lemon, thyme. I guess they won't be as nice reheated in the oven as freshly deep fried but at least Mrs. Beer will get to eat them.

    The first result I saw when I googled these was 'stink beans' :D

    They don't stink when raw/cooked. They stink your pee and the whole bathroom.

    Making a beef stir-fry tonight. Gave the book that contained the recipe I use to my cousin in the UK so "using the force". Looking forward to it. Trying to decide between wine or beer....think it'll be beer!

    Apparently just slices of cheese! It looks a bit gritty to me though around the top of the spud, like there's butter there. They gave a short recipe that goes " potato, cream , cheese and more cheese... salts & pepper"

    I could see my way clear to putting bacon in there too.

    Those are what I like to call Hasselhoff potatoes.
    They're like Hasselback potatoes but a lot cheesier.

    I could see my way clear to putting bacon in there too.

    I do something like these occasionally, I can't remember where I saw them first, anyway, I pour a little olive oil onto my hands first and then rub each potato so they get a coating of oil, but not too much IYKWIM. Then slice them. The real beauty of them is that they cook much faster than an ordinary baked potato which is great for weekday suppers.

    I had never thought of squeezing cheese into the cuts though....

    There's a problem with it intermittently, but if you clear cookies (mmm, cookies), it should automatically switch to the touch site when you open it next time

    Strong possibility I'll be moving out of my wee apartment soon-ish, so the plan is to eat myself out of house and home to minimise waste.

    One time when I moved house, I ended up having to leave probably €100 worth of food, condiments, spices etc after me as I was moving very far away, only had a tiny car, and couldn't fit them in. A second journey wouldn't have been possible, desirable, or justifiable. Never want that to happen ever again!

    Will be making strong use of superfood website and you guys!

    Making Boston baked beans today in the slow cooker, made them once about a year ago. Seemed like a good idea until I remembered I had to get up way too early for it to be ready at a reasonable dinner time :p 9 hours cooking time! Gonna be worth it though!

    Made my own granola today for the first time ever. I usually have yogurt, seeds and berries for breakfast so thought I could sub in granola for the seeds. Looking forward to breakfast tomorrow already!

    Wine production is under way. Letting it sit until March, stirring occasionally.

    Did some grocery shopping today and also bought an iTunes voucher. Packed everything away and couldn't find said voucher.

    Found it now. It was in the fridge. With the cheese.
