Fermented sour dough bread (polish people)

    HI, Hope someone can help. I have recently read about the positive effects fermenting has on the proper assimilation and digestion of nutrients.
    I am looking for a good sourdough bread ( ie, bread that flour has been fermented for at least 12 hours ). . I am in the midlands so unfortunately not too many bakeries locally.

    I know polish shops have a lot of fermented breads. Can anyone recommend a tasty , properly fermented bread, All the packaging is in Polish so I am completely lost ..

    OP, is the issue a long proofing process? If so, if you have Dutch oven you can make your own without sourdough starter by using a no-knead process: http://www.nytimes.com/2006/11/08/dining/081mrex.html

    It would be marked as "Chleb na zakwasie" and it should NOT have yeast which is called "drozdze". However Tesco bakery seems to be doing sourdough breads, they are pretty tasty.
