    fancy bread? = ciabatta part baked from aldi or lidl.
    1. Cut ciabatta in half. Spread each half with red tomato pesto.
    2. Fry mushroom and red onions with crushed garlic in olive oil. You can also added chopped veg of your preference; Red pepper and courgette is particulary good. Add seasonings etc, be inventive! I like basil, black pepper, sweet paprika and a splash of red vino.
    3. Spoon fried mix over ciabatta, and douse with shredded cheddar and torn mozzarella.
    4. Pop under hot grill until cheese melted. Alternatively place in sandwich press.
    5. Eat. Enjoy!

    Excellent thread. Keep those sandwiches coming guys. I'm not really a big sandwich person. My GF is, however, and is loving your inventions.

    nice, but i have a variation - toasted white bread, as above, but with thin , very thin slices of garlic sprinkled over it.

    course you have to love garlic - for wimps, onion will do.

    I'm a wimp, the oul' tummy can't handle raw garlic these days. :( I heard wild garlic is a lot milder than the commercial stuff though, might give that a try.

    actually the stems/ leaves of wild garlic are the business, and not as tough on the system (though i dispute that garlic induces stomach probs :))

    My fave at the moment - 2 nice big thick slices of white bread, butter em. Layer this on: Slice of good corned beef (not that sh!t you get in a tin), slice of pastrami, slice of ham, slice of cheddar cheese. A slather of standard english mustard.

    This is a simple but delicious sandwich - grilled rashers, sliced boiled egg, skim of mayo.

    Heres a decent one - Grilled rashers, chicken breast, mayo, loads of fresh sliced iceberg lettuce.

    heres another nice one - salami, rashers, ham, chicken, pastrami, corned beef, cheese, lettuce, tomatoe, tuna, boiled sweets, cucumber, red onion, sliced boiled egg, peperoni, sliced sausage, black pudding, beetroot, billy roll, sliced turnip, sliced roast beef, sliced me finger, horseradish, sliced peppers, turkey & a big cup of tea.
