    zuchini is eggplant/ aubergine iirc. It's delicious - lots of different ways to cook it but the simplest is to roast it.

    Cube an aubergine, a courgette, some carrot and slice an onion, add to a roasting dish, liberally drizzle with olive oil and roast @ 200C for 20 mins.

    Absolutely divine :)

    Buffalo mozallera is your friend - you can buy 125g balls of it for relatively little that are perfect for stuffing chicken breasts. Wrap it in streaky bacon and you have a protein/ fat feast :D

    it's a brilliant way to cook chicken because the bacon keeps it so moist - I usually mix a little bit of wholegrain mustard into the mozarella too to give it a kick, usually 50g (big spoonful) of mustard per 125g ball of cheese.

    I really want to try the duck-in-a-pheasant-in-a-chicken recipe someday too :D
