Becoming a favourite now, stuffed Courgettes. Toasted pine nuts, good cherry tomatoes, lemon zest etc etc.

Roast beef bagel with caramelised onions, sweet peppers (from a jar) grated cheddar and salad mix. Into the oven for about 6-8mins.

(Finally got a kiddo to eat one aswel after years of asking. They were having none of it before because of the peppers & onions. But I just made them one without asking and they ate it🤌)

    ....…

Tried out Saba for the first time, been on the list for a while. Not bad at all, have to say. Both dishes were very tasty, but my partners crispy chilli chicken was the clear winner, alas.

Saba, the restaurant. South William St, though there are other branches, I believe.

Chicken leg and salad. Sprouts, rocket, chickpeas, beetroot, green beans and some buffaloumi cheese. First time having it and have to say it's delicious, really worked in the salad. Will be getting it again.

Looks like food made in someone's home - in a good way!

With honey and maple syrup. Never tried these before.

Some form of vegetable and coconut soup, from Sonny's Deli, fellow Corkonians. I added fish sauce and turmeric.

    More salad

Mexican black bean soup is one of my favourites. Easy to make and tastes luxurious. Avocado on brown bread.

    Forgive the messy presentation!

Damn good for emegency rations in work. Are a good step up from a pot noodle! Prefer the Shin Ramyun Black but there is a nice kick from this to clear out the sinuses.

    Tuna salad with warm potatoes.

    IMG_20260309_103049.jpg

Used the last of my Everything Greek seasoning from M&S on this. Recommended!

Lamb keema crunchwrap. No picture because I inhaled it. Going to have to do more of these.

Keema is basically just a 'curried mince' type thing, in case you're not into it. Fancy ish version here, the one I initially blagged it from here. Did it with lamb, left out the potatoes, added peas it seems in this version (it was reheated from the freezer this morning). Mine was a little dry compared to these, I will admit.

Into a wrap, bit of cheese, bit of lettuce, wrap up into whatever shape you want, then into a pan / george foreman grill to crisp the wrap a bit and melt the cheese.

    Face.

Just watched both the videos. Mouth watering. It's definitely a process, and I think I'd like mine not as wet as the second one. But I'll definitely make it.

Aye, it's definitely one of those dishes you can make as simple or complex as you like, depending on mood or time available. Mine was basic bitch version.

Finally got around to getting a proper vacuum sealer for ye olde sous vide bags, did some chicken breast off the bone in it while doing a fridge clean earlier. Some beans and kale with toasted walnuts with it.

Earlier in the week, on-sale rib-eye steak sandwich.

    Celery and spinach soup.

Soft cheese with cucumber on rye toast. Scrambled eggs.

I didn't include the dill for fear of upsetting some of you. :/

@igCorcaigh all looks so nutritious - and thank you for the lack of dill in the photo.. ☺️

    Needs more dill, I say.

    Eaten at 2pm so it’s a lunch. 😉

Easter Sunday, has to be lamb. Saw a tip yesterday in the Indo to cover your leg of lamb in cream cheese before roasting. Came out so moist and tender, maybe there’s something in it.
