    My 2nd favourite breakfast after poached eggs.

    Greek yoghurt, granola, drizzle of honey, pomegrante seeds, blueberries and raspberries all washed down with a pint glass of 30% beetroot juice / 70% sodastream sparkling water and a freshly brewed Americano.

    Been ill a while now so haven't been cooking much. First time bothering to do something vaguely requiring effort in a few days. Avocado toast, soft boiled eggs.

    Road testing my new 28cm. tawa which I got last night. Electric sanded and seasoned as best I could. Not it’s intended use but I couldn’t wait 😀😀

    No pics, but homemade brown soda bread, well toasted and crispy, and a ripe banana - the heat makes it go ever so slightly sweet - gawjus!

    Cilbir (Turkish Eggs) with flatbreads - Meh, I like all the ingredients (Greek yoghurt, garlic, poached eggds, chilli, paprika, butter and fresh coriander) but it just didn't hit the "breakfast" itch. Might be better in summer or in a warm climate. Glad I tried it but probably won't make it again.

    BLT & a latte.

    I didn't really enjoy it though because it was a bit cold. Also, I must not have been paying attention because I end up putting too much mayonnaise on the toast and some bites were a bit 🤢. But the coldness of the toast was the main problem. It was a cold sad sandwich.

    The coffee was lovely - so lovely I made a second one and got back into bed ☺️

    Bacon and cheese omelette. Was trying for french but I couldn't get it to roll without tearing so it spent a bit longer on the pan… and still didn't roll properly

    Kookoo Sibzamini - an Iranian dish of grated potato, onion and egg. Really comforting. Learned it from an Iranian pal. Should have used a bigger plate!

    Homemade tortillas and Mexican ish type stuff. Chorizo, eggs, avocado, hot sauce, red onion, coriander, sherry vinegar.

    Standard recipe here. Needless to say the difference in shop vs homemade is huge. The resting step at the end is crucial. Gets them all soft.

    Do you have to make the filling separately from the outer dough? Are they a bit of a faf to make?

    Yes and yes! Theyre really nice though.

    Ingredients - Serves 4

    FOR THE DOUGH

    • 250g Plain Flour
    • 200ml Boiling Water

    FOR THE FILLING

    • 2 Tbsp Sesame Oil
    • 2 Tbsp Plain Flour
    • 1 Tsp Sichuan Peppercorns
    • 2 Bunches Spring Onions

    FOR THE SPICY SAUCE

    • 1 Clove Garlic
    • 3cm Ginger
    • 2 Tbsp Soy Sauce
    • 2 Tsp Chinese Black Vinegar (Substitute Half Apple Cider Vinegar And Balsamic Vinegar)
    • 1 Tbsp Sesame Oil
    • 1 Tbsp Chilli Oil Bits
    • A Pinch Of Sugar
    • Salt
    • Vegetable Oil

    Method

    Step 1.

    Combine the flour and hot water (the water must be boiling!) with a wooden spoon. Once it is cool enough to handle, knead for 10 minutes. It will be sticky at first but don’t add any more flour, it will form a really soft dough.

    Step 2.

    Wrap in cling film, and let the dough rest for 15 minutes.

    Step 3.

    Mix the sesame oil, 2 tablespoons of flour, and a pinch of salt to form a paste.

    Step 4.

    Grind up the Sichuan peppercorns in a pestle and mortar. Then finely chop up the spring onions.

    Step 5.

    Portion the dough into 4 pieces, cover remaining in cling film.

    Step 6.

    One piece at a time, roll the dough into a large circle. It should be only 1cm thick.

    Step 7.

    Spread about 1 teaspoon of sesame oil paste onto the dough before sprinkling on a pinch of Sichuan peppercorns and a handful of spring onions.

    Step 8.

    Tightly roll the pancake to form a log. Roll the log, tucking one end in a spiral to form a snail shape.

    Step 9.

    Gently press, and roll on it with a rolling pin gently to form a thick pancake. Keep each pancake separate, in between sheets of baking paper, until you are ready to fry.

    Step 10.

    Fry on both sides for 2-3 minutes per side until golden brown. Serve hot with the spicy dipping sauce.

    Step 11.

    For the sauce, grate the garlic and ginger in a bowl. Pour in soy sauce, black vinegar, sesame oil, a tablespoon of water, chilli oil and a pinch of sugar, then mix to combine.

    had brunch in The Wooden Whisk, Talbot St, Dublin 1. the other day - twas fabbb… forgot to take pics.. but I highly recommend it… staff great and food top notch.. we had omelettes which wer fab and served with a side salad and toast - sourdough.. coffee… cakes and all things confectionary looked unreal.. but had to walk past them

    If and when in Dublin, I highly recommend this place.. esp for B'fast/Brunch

    Been having smoothies a good bit lately (yoghurt, kefir, frozen berries, banana, whey and chia/flax seeds), but decided to give my moustache a break.
