    Last night we had a shop bought lasagna with frozen chips and an Irish salad. Aka tasteless slop with cardboard and crunchy cold water.

    Must improve this evening.

    So, I assume that, "crunchy cold water", is iceberg lettuce. But, what is, "tasteless slop with cardboard"?

    I gave in last week and ordered in pizza. We went with Four Star and an extra large Xtra Cheese that didn’t taste of anything.

    Four Star must be my least liked mainstream pizzeria.

    My local choices are Four Star and Pizza Max 😔

    I haven't tried the Pizza Max yet, but my expectations are not high. Their garlic chips are nice enough though.

    I find this app excellent for calculating time etc. That Doug was made Tuesday for Friday and proved at room temperature, too many beers in the fridge 🤣

    Could I bother you to ask how you do the rosti bit? Almost always end up too far on the oily end.

    I used sirloin, it's mad how even a small cut like 200grm can feed 2 once you bulk up the veg

    I've made this before by coating the beef in flour, Chinese 5 spice, egg etc but I didn't think it was worth the effort

    Now I just coat the bottom of wok with groundnut oil & leave the beef get really brown before turning & a quick flash fry then, it's cooked but not overcooked & chewy iykwim

    I have a trick for that: spread the rösti out on grease proof paper in the oven to dry it out and part cook. That way it’s drier when it hits the pan, less greasy & wet. I add the cheese at the end and pop under the grill to finish.

    Yes, to dry it out and prevent it becoming too wet. It then crisps up nicely once in the pan. You can always use a little oil too in the oven if you’re worried it’ll get too dry.

    Your beef looks lush & delicious. I can never be bothered with the cornflour bit.. truth is I’m often too hungry and don’t want the faff. If I have the time, I’d rather marinade the beef for an hour or longer to strengthen the flavour.

    Thanks! I know what you mean... although I haven't tried it with beef, I think velveting chicken in a little corn starch etc (I love Chinese 5 spice!) does produce good results for a stir fry.

    Other than sirloin, does anyone know what type of beef cut I can use for the kind of beef that you get from a Chinese takeaway? I asked in the General thread, but no replies.

    This is the kind of beef I mean, it's wider and not like thin slices that you would get with steak. Perhaps they just get big blocks of beef and slice it? I dunno:

    Have you tried rump steak? I prefer it as it’s a lot thicker and more substantial. I’ve never liked thin steak/beef as it’s too easy to over cook it.

    I haven't actually, I'm very clueless about most meat cuts (usually just grab the supermarket stuff, and it's not often that I buy red meat), but I will try rump, thank you!

    On the rosti : I always put the grated potato in a thin tea towel and squeeze out as much liquid as I possibly can.

    On stir fried beef : sometimes I'll sear a steak of my choice, then slice it and add at the very end.

    I've also had good results with marinated flank steak (sugar, soy, rice wine, vinegar) sliced and fried. Too tough, I think, if not marinated.

    We're celebrating Chinese New Year today with some friends and family. 9 adults and 2 smallies.

    There's one pescetarian coming for this meatfest so, he'll need looking after, too.

    Saketinis (a kind of gin martini with sake and plum wine and a lychee)

    Aromatic crispy duck pancakes with spiced damson sauce.

    Lo mai gai (glutenous rice wrapped in lotus leaf with a savoury chicken, Chinese sausage, shrimp, mushroom and pork filling).

    Cold beef tendon in soy, vinegar and chilli dressing.

    Sticky, spicy slow cooked pork hock with rice and kai lan.

    Stir fried prawns in coconut milk and coriander.

    Bean curd skin and cucumber salad.

    Maybe another prawn dish and some sort of tofu dish.

    Sesame filled mochi and tinned lychees.

    Tea.

    Will try to remember some pics.
