    Scarlet for yer ma original is really really good. There's texture, bits, pops & amazing taste.

    And of course there's the classic Tabasco sauce by Edmund McIlhenny of Irish descent! One of the best condiments to have in a kitchen.

    Its, er, unique alright.

    Delighted the crazy bastard guys are doing so well. See it everywhere now. First bought some from a stall in Berlin about 10 years ago when they were a tiny setup.

    a relish/chutney rather than a sauce, but i've been using this recently, and it's good stuff.

    I tried their Trinidad Scorpion and Mango one and it wasn't too bad.

    The Superhot Reaper one is quite indeed Superhot.

    Yeah, whilst i like heat there also has to be flavour. I'm not really into sauces so hot you can only handle a couple of dips before your mouth is on fire. Just seems kinda pointless to me. Currently enjoying a Nando's Peri Peri marinade. Nowhere near as hot as i was expecting but pretty good otherwise.

    I'm like @igCorcaigh in that i'm a bottle on the table kinda guy rather than doing marinades and whatnot. I'll use hot sauces in soups, stews, stirfrys etc. but i like them for a 'thrill from the grill' (waffles/burgers/breaded fish/chips/wedges/...lazy day food basically) and pretty much anything else to just dip my fork into!

    I like the sound of those Dublin Hot Sauce crowd. Might have to order some of those.

    Got "Frank's Original Hot Sauce" last week. For the craic. Opened and drank a drop as you do. Fierce vinegary from the off. Not too hot. Put a line 😀 on a hot dog type a thing. Kinda lost in it, must use more. Not fully run it in yet.

    Frank's, to me, is more vinegary than hot, like those Louisiana type sauces (Crystal etc.). I prefer the fruity/vegetal but hot varieties.

    Took a punt on M&S naga chilli sauce. €3.

    "Sweet and smoky extra hot chilli sauce made with habanero and naga chillies."

    Yep, nice heat, and an lingering undercurrent of smokiness.

    Would go with anything barbecued.

    Agreed. I was slightly disappointed with Frank's. It was fine but not really what i was expecting/hoping for.

    That M&S naga chilli sauce sounds good. I'll be looking out for that.

    The first time I used Franks, the instructions mentioned adding lots of butter. I don’t bother anymore but it may mean the sauce is more vinegary than it should be….

    I'm the same, found Frank's and others too vinegary, switched to this after it was recommended here.

    Picked up some with Kaffir Lime in it. Another with lemongrass. Both lovely.

    Walking past M&S today i remembered this one. Unfortunately (and crucially) i forgot it was a naga chilli sauce and ended up buying a Hot & Smoky Marinade; "Mexican-inspired marinade with hot and smoky guajillo, chipotle and pasilla chillies. It's perfect for chicken, red meat, fish and veg. Chilli rating - 3".

    Haven't tried it yet but obviously going to be a lot milder. In my defence, if i'd seen the naga chilli one i'd have bought it. So either it wasn't in stock or i wasn't looking hard enough!

    That sounds nice for a marinade though. Haven't been to M&S for months, must take a look in.

    My current one, nice and thick/fruity with a good bit of kick (fairly hot actually! anything from this brand is decent I find):

    I've had that one. Very nice it is too.

    As for storage? Most of the time i keep them in the cupboard without any issue. Occasionally one will make it's way to the fridge.

    I just wanted to say tried the crazy bastard sauce once and I thought I was going to die. Far too hot. How can people tolerate it? It's a mystery to me.

    Build up slowly! A little each day; it's a tolerance thing, but also individual. What you experience may not be what others do and vv.
