You need to cull bad sheep and keep good quality ewes. Pairing is a tough job as is shearing.

Sheep are more unforgiving than beef cows as they seem to be more prone to issues. Going on their backs, maggots, foot problems, lying on their own lambs, throwing their own lambs in to water buckets, breaking out of fields.

Having said that, sheep farmers that have good sheep balk at the idea of keeping sucklers and tell you they is money in them versus sucklers.

They will keep you very fit.

You would need good fencing and winter housing. Maybe 20 ewes max if it was me 10
