That looks amazing Gloomtastic! I made Bakewell slices, just waiting for it to cool so I can cut them.

I did a chocolate mousse yesterday, but I really need to get more bowls.

Here's my snow day efforts to keep the boredom at bay. Almond and Polenta Orange Cake

I made lemon cake with the toddler today. With a raspberry jam centre. I say I made it with the toddler but really I gave up letting him help when he shouted "it looks like snow!" And face planted the flour.

After a constructive morning building an igloo with the kids in the front garden, a cup of hot chocolate with a builders’ slug of Baileys added - delicious! :)

I've some smoked garlic and was wondering would it be nice roasted with butternut squash to make a soup from? I'm low on food right now. I haven't tried it before.

    Yes that would be gorgeous.

Sounds good Surreptitious. I'm looking forward to getting out for fresh fruit & veg, I have a pot of Shrivel soup on for today's lunch (made with everything that's starting to shrivel).

Ooh I really read that wrong. Clearly the booze is still in the system.

Which is also why the pic below is so blurry
Basically, french toast except added double cream, vanilla and maple syrup. Delish.

Next Sunday I'm cooking for 5 adults and 2 toddlers. Meal must cater for diabetic and slimming world. I'd like to do a selection of dishes to cater for different tastes without having a specific toddler meal, SW meal etc any ideas? It's the SW part that's catching me. I don't do it myself and don't know how to account for spice mixes, cheese etc.

Anyone any ideas? Thinking maybe Indian style food.

(not catering for SW "for just one meal" is not an option, as much a show of support for someone who needs it as much as anything else)

Would be a tapas style buffet be an option?

It would! Suppose best place to start is googling SW recipes.

I think it's the handiest way to cater different diet requirements, small plates of everything in a huge variety. We did that for after Christmas when my In-laws came, 5 adults, one child and we were all stuffed in the end. And it's sooo much fun!
I'd have a look at recipes that can be prepared well and just need to be popped in the oven, so you can constantly plate up more with relatively small effort.

I think I'm going to try make a lasagna party ring on Saturday. Looks good, and might go well with some home made coleslaw and a few greens

Pinchofnom.com is a fantastic source of Slimming World friendly recipes. A lot of them are so close to 'normal' recipes that you'd never know they're SW.

Can you do a meat and salad buffet? People can then suit themselves according to their dietary needs. Then do one indulgent dessert, and a nice fruit salad with cream on the side.

Right I have most of tin of kidney beans but no intention of making another bean based stew so what can I do with them? I've never eaten kidney beans on their own!

Mash them up and mix with mince to make burgers. Or add to a bowl with a diced onion and use it as a kind of salad dish.

Chop ripe mango, toss with rocket and cold kidney beans. Serve with something spicy - I like it with a spicy garlicky aloo tikki.

Or throw them into a tin of tomatoes with some chopped chillis, cumin, smoked paprika and garlic. If you have a jar of jalapeños then a splash of the brine from the jar. Have with nachos.

Finally I like them stir fried with brown rice, chilli, lime juice and honey.

Most of a tin (how does one even end up with that?) isn't really enough but you could make a bean paste/pate. Soften some onion, garlic and chilli with cumin, coriander & paprika. Whiz in a food processor with fresh coriander, salt, pepper and lime juice to taste and til it hits your preferred consistency.

I think this was Shenshen's recipe - refried beans. I've made it and it's amazing :)

    1 tin of kidney beans
    1 small onion
    1-2 cloves of garlic
1 jalapeno (or chili, but I prefer the touch of vinegar on the jalapeno)
    1/2 tsp of cumin
2 - 3 tbsp of cream cheese (or cheap Lidl alternative )
    Salt
As much grated cheese as you like, cheddar works brilliantly here.
Coarsely chop the onion, garlic and jalapeno or chili, then throw it all and the beans on a food processor.
Blend until it's as smooth as you want it, then fill a ramekin half with the mixture.
Layer in some grated cheese, then fill up to the top with the bean mixture, topping with more cheese.
Put it in the oven at around 180 degrees for around half an hour, it should be nice and bubbly when you take it out.

Jalapeños are pretty mild but do have some heat.

A lot of US recipes specifically mention them, so just use a less ordinary if you cant get them

Depends on whether the recipe calls for fresh jalapeño or ones in brine or vinegar.

The sliced chillies you get in jars here are are usually jalapeño but you can sometimes come across them fresh too.

You tend to get a jalapeño in those fresh chilli assortment packs that supermarkets do.

Might be wrong, but I think Lidl has them when they have America weeks.

EDIT: The ones in the jar I mean.
