A syncope in medicine is a faint so syncopation = fainting?

I always hated learning piano and was never a great student but as far as I can remember it has something to do with putting stress on sounds that aren't normally stressed or something along those lines.

Two out of three gets you the gold medal.
You have given the classical definition of the term in music. It has, however evolved into also covering other deviations from the standard accentuation such as the anticipation of the beat as used liberally in jazz and swing.

In phonology it refers to the practice of dropping the enunciation of syllables eg pronouncing Leicester as "Lester".

Nope. There may be others I could have included but I can't think of them and wouldn't be au fait with more recent hits.
