Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Sure. As I said, basically it's a Victoria Sandwich, the recipe for the baked part is basically this :

    For the filling, I made a butter cream using 100g of margerine and 200g of icing sugar, softening it with a little milk. I also added coconut essence/flavour to it.
    The jam is home-made pineapple, mango and rum, I don't know if you could buy anything similar in Ireland. But if you live near Cork, I've got a few more jars, so I could give you one of them :)

    No, I was being serious! I was about to ask you after how long you'd rotated it to get the pattern!

    But if you don't want it, maybe put it on the rack with the other side down? The one that'll be in the middle?

    Ha I always purposely do that to my cakes when I cool them to get that effect!

    Oh! haha awks :pac: Yeah, I didn't even move it - I suppose it was on the rack for a good bit and it was fairly warm when I put it on it, so it probably just sank down into it.....I didn't mind it cos I wasn't giving it to someone else but yes, that would be the most obvious thing to do if I didn't want the pattern!

    Thank you for the recipe. As for the jam, that's an incredibly generous offer! :) Thank you, it's so kind to offer, but I am in Dublin.

    Didn't turn out as hoped, but tasty nonetheless! Gluten free..."donuts"

    Recipe is pretty easy, even if the end result doesn't look anything like the pictures :D

    Just finished up my second term of afterschool baking with kids from school! 10 very frantic classes but great fun all the same. My favourite thing we've made were margarita pizzas. They look a bit messy but they were made by kids!

    Thank you, no, did not sweeten cream on cake, as with sponge and strawberry, it was sweet enough for adults, I did for the children buns, a teaspoon per 125ml of cream :) thanks

    Tea brack recipie here.

    Details are scant on recipie do this us what I do...
    I soak fruit in tea fir about 8hrs. (I use a variety of raisins, normal, golden,mixed fruit mix, cranberry etc€
    Add nuts. ( I use walnuts, pecan, and a nut mix)

    Mix well.
    Stir in sugar, mix well, it's a big amount do start with a very big bowl.

    I whisk the eggs. Stir in to mix.

    Then add flour and spice.

    Stir, stir, stir.

    Pour into 2 well greased pound tins.

    Into oven.

    Try and hold off as long as possible to open. (Drool)

    Slice add copious amounts of Butter.

    Coffee.... Happiness :)

    Forgive me for linking to the Daily Mail but this is the recipe I used.

    When you add the wet to the dry there's a reaction kind of like when you make honeycomb. I think you need to be very quick once you get to that stage, I was a bit slow about it all which I think contributed to the sagging in the middle. Opening the oven door two or three times at the start probably didn't help either :)

    The Range in Liffey Valley also have some supplies, have yet to visit them though, so I'm not sure how big their range is
    And I think Stock on South King Street also have some baking supplies

    Home store and more can be helpful but I'm not sure they do sugarflair! I've usually bought gel colouring there but they have a good range of fondants

    Yesterday I made a lemon and lime drizzle cake using Mary Berry's recipe for lemon drizzle cake (instead of 2 lemons I used one lemon and two limes).
    It's kind of the perfect cake - quick and easy as it's an all in one method, it's huge (I make it in a roasting tin!), moist, zesty and tasty! If you hide it well enough it'll keep for a week.

    Made some chocolate brownies for the first time, surprised how quick and easy they were. Although the only other desert I've made in the past 3 years is a lemon tart.

    Tastes great too which is a bonus although cream needed. I didn't look at every part of the recipe and noticed at the end it serves 20 so it's going to be around for awhile

    Angostura bitters as @arian said. Great in a nice sour, though the lad in the offie also recommended putting it in stew.

    Hey, looks fab! You have a nice vibrant red colour in the meringue. Do you use any particular type of food colouring?
