You'd also need it relatively easy to pronounce if its in Irish for your international markets :)
Very true but that would probably rule out a lot of the 'as Gaeilge' suggestions as the OP was originally hoping to tap into that market. Might need to rethink the brand name objective if the OP is set for world dominance.

hmmm Cheesy coffee, I like it, get a marketing team onto that, run some field studies, bung it onto a power point, jazz it up with a few graphs and get me on the first flight to Geneva

I'd recommend you visit a local enterprise office for some advice. I know very little about Údarás but I'm sure they'd love to hear about a business idea like this if you live close to the Gaeltacht. Best of the luck with everything and make sure and let us know about the product if it comes to market.

I like that idea actually. Based west cork. Probably roasting Gougane Bara that is where the industrial units are. In Ballingeary. Maybe some research into Gougane Bara might give me a name. Thanks!

I'd say that's a tough one to break into. Know a few who did it around West Cork and South Kerry, 1 or 2 still at it, 1 or 2 who gave it up, all "knew their coffee" as had run or worked in cafes...and spent all day drinking it! Lot of competition.

I presume you've done it already but would strongly suggest you get a real feel for your market before ploughing too much in. Can't imagine cafes in Ballingeary packed on a Tuesday morning, transport to Skib/ Macroom/ Kenmare would add some costs compared to local competitors already in those towns. Plus a lot seem to go for the "oooooooo Badger and Dodo" trends (I get this second hand, I'm not a coffee drinker).

Ah yeah this will be one of those projects that i will enjoy even if I break even. I am building the oven myself and already have a good few businesses that would be interested in taking my product because they have known me for years.

The fact that I will be doing wood fire roasted (or turf thanks to earlier poster) might help distinguish my products and give me an edge.

    Cheers!
