I can understand at this stage of your life why you are considering having a child. I can also see why he does not want more children.
I would not try to talk him into it. Not would I deliberately try to get pregnant thinking he will be happy if it happens because it won't end well.
At this stage I would just say that you're ending things as long term you want a family and you know he does not want anymore kid's. I know it's not an easy thing to do but at least he has been honest with you.
Also your 25 so time is on your side to meet another man who wants the same as you. I know two women who were older than you when they ended relationships because he did not want kids. Within a few years they both had families.
