Steve Martin and Chevy Chase were box office gold until around 1992.

Then their stars just faded into oblivion

Many more Hollywood actresses than actors, and a few I can think of:

Holly Hunter (terrific but seemed to disappear off the face of the Earth around 2000)
    Debra Winger
    Kathleen Turner
Carrie Ann Moss (huge for a very brief period, when she starred in The Matrix and a couple of other films...then poof!!??)
Margot Kidder (RIP - her health problems snuffed out her acting career)
    Melanie Griffith
    Helen Hunt

...and quite a few more I can’t think of just now.

Rick Moranis (Canadian but I'll mention him anyway :D)

Quit acting when his wife died to raise their children. Always really respected him for that. Most in Hollywood would be too selfish to do something like that and just have a nanny raise the children.

What you haven't mentioned is that he became agoraphobic during that time and very rarely leaves his house, he has also released a few C&W albums, The Agoraphobic Cowboy being one of them

I didn't know that about him tbh. Always good to learn something new.

James and Natasha Bedingfield. They were everywhere about ten years ago, then poof! Same for David Grey.

Does Syd Barrett count? He turned up out of the blue a few years after his initial disappearance, walking in on one of Pink Floyd's recording sessions ("Shine On", appropriately enough) and then dropped into the void again (well, Cambridge).

Richey Edwards from the Manics, although that was obviously entirely his choice. If he is alive (unlikely), he clearly has no wish to be found.
