I think I'll have a three egg omelette with chips and beans. There's a surplus of very sweet forced rhubarb in the garden, so rhubarb and custard for dessert - must check there's enough milk for morning.

Stuffed. I threw a scoop of vanilla ice-cream in with the hot rhubarb and custard and have that enjoyable lingering after-taste which is so satisfying.

I love rhubarb but never got the hang of cooking it.

Today I had an omelette topped with stirfried peppers, onion, mushroom and jalapeños, topped with cottage cheese and coriander.

Now I'm about to sit down to one of my favourite meals. Flatbreads, falafel, humous, spinach, beetroot, feta and walnuts.
And a stuffed mushroom for good measure.

Have a bar of green and blacks for after.
