I've also seen it and wondered if they ducked the bullet or was the shot over its head and it's quick reaction made it seem like it ducked it.

Lads they are not from the Matrix. :D

Two things happen, that i have witnessed.
    1. You miss and the rabbits reactions are so fast it seems simultaneous.
    2. You clip the ear and they duck down. I've often picked up a rabbit with a hole in the ear.

i have had the hole in the ear as well, which may also support the duck theory,i have seen through the scope the rabbit pull down its head as i fire,i thought maybe they could hear the firing pin striking the case, and reacted by ducking,im sure anyone with a 22 has seen this happen, never seen it happen with my hmr, maybe because its a faster bullet???

Their reaction speed would never be quick enough since even subsonic ammo is travelling near the speed of sound.
