Irelands best sausages

    Haven't had Clonakilty sausages since I was in college many a moon ago, but just had one there and sweet jaysus do they beat the ****e out of Denny!

    So what brand do After Hours reckon is the best for a sausage feed?

    Vaguely remember there was a place in the Cork English Market you could get fancy butchery ones which were pretty good, and of course the old superquinn ones were pure daycent!

    You can get the tastiest sausages from certain butchers.There's a butchers in rathmines that's bleedin' rapid.

    The only thing nicer than a hot Superquinn sausage is a next day cold Superquinn sausage :)

    I eat all kinds of sausages, but I've never experienced anything other than mild disappointment when eating anything other than Superquinn.

    Superquinn sausages definitely appear to be the equivalent of iPhones in the competitive retail world of MSG-Seasoned Pigs Intestine and Minced Testicle.

    Countrystyle sausages from Co Waterford are better than superquinn or Clonakilty.

    I have heard good reports of Lidl and Aldi as well.

    But I wouldn't stray from Clon black pud which is boss.

    Dunnes Stores Simply Better before Olehausen went out of Business. They were delicious when they were previously made by Olehausen, now they're made by Mallons and they're just meh!

    I always ate Olhausens, still disappointed by others. Granby are ok, I'll usually pick up some of the lidl ones though. Only problem is they're prone to shrinking a lot.

    Both Aldi and Lidl do nice speciality sausages, love the beef ones.
    Barry Johns from Cavan do a good range, Honey and Mustard, Pork and leeks and a good breakfast sausage with bacon, egg ,tomato and mushroom. They have won the Craft Butcher competition a few times.

    I read that Olhausens and Kearns are the same company and they are also responsible for Aldi and Lidl's own brand. I don't know if they changed maker when Olhausen's went busted for a couple of months

    There's a craft butchers on Pearse Street Dublin that have the nicest sausages I have ever tasted and hat goes for pudding too. Expensive compared to supermarket ones though!

    FX Buckley Butchers in Nutgrove Shopping Centre are doing proper Beef Sausages now that I think of it - a bit longer to cook but very much worth the extra wait! *drool*

    Even Ireland's worst supermarket brand sausage is better than the rubbery ****e they pass off as sausages over here in England!

    I brought 4 packs of clonakilty over in my checked-in luggage for the semester! And 3 packs of Galtee rashers! Froze them in twos. Heading back in a few weeks and will stock up on some more.

    Recipe please. :)

    Minced pork 400g.
    Chopped streaky bacon(fairly small pieces) 200g
    Peeled and grated Granny Smith apples x 2.
    Small handful of fennel seeds.
    Fresh or dried Sage(Its personal choice on how much you use)
    1 large red onion chopped very fine.
    Couple of handful of breadcrumbs.
    Fresh or dried Parsley.
    2 teaspoons of Cayenne pepper(optional)
    Salt and white pepper.

    Soften the onions in some butter and add the bacon half way through and then the Sage when the onions are almost done.

    Let the onions and bacon cool and add them to the minced pork along with the rest of the ingredients and mix thoroughly.

    Cover with clingfilm and put in the fridge for a couple of hours.

    Then either use a sausage maker or make them into patties.

    The ones from the Old English Market in Cork, they're called O'Flynns gourmet sausages. No others come close. They do all sorts - pork, chicken, beef mixed with all sorts of other ingredients from leeks to sun dried tomatoes. Yum yum.

    With all due respect to Super Rush's excellent recipe, the point of a sausage is that there is(are) some secret ingredient(s) known only to the select few.

    For a change, I find the Dunnes Premium (also made by olhausen) and Tesco finest to be nice enough.

    Those are the ones alright - relatively expensive, but very much worth the extra cost. The real deal!

    Perhaps I'm biased because I'm from the same town, but Hodgins jumbo sausages taste so goddamn ridiculously meaty that my mouth is watering at the thought of them.

    Bought Clonakilty sausages recently and they were just meh. Not up to the same standard as their puddings.

    The Meat Outlet (Santry-based distribution) make some decent sausages. Rudd's and Truly Irish are also good.

    Clonakilty's are the job, love them! The uncle is a butcher and I've had a few sausages from where he works. Nothing short of addictive :o

    You can use the recipe for stuffing as well but substitute the apples with apricots.
