I no its probably been asked a 1000 times but what is the correct way to process a rabbit after its been shot . Do you need to gut them straight away or can they be hung in a fridge to chill for a day or two

    Thanks

    gh

You want to gut them straight away especially in warm weather, the heat and fermenting grass etc. in the gut will ruin the meat.

yup, clean them as soon as you can, saltwater overnight, then 3-4hours in the pot with your chosen recipe, then sit down to some proper good food.

    thanks lads ,

Just said id ask as i was asked to get a few rabbits for a group of lads who are being shown a little bit of game processing and butchery on thursday coming . So if i get them tonight and clean them out and chill them there should be no hassles

Funnily enough, as a child my uncle didn't gut them and hung them for a good few days and I still remember them being delicious at the time (gamey I was told), however a few years ago I left the guts in until I got home in the summer, went ahead and cooked them anyway and they were horrible.

My father never gutted them either, hung them for a few day's then processed them.
    Never did us any harm.
Having said that I alway's clean them asap.

Reared on "four-legged chickens" - sisters refused to eat rabbits.

Gutted them when home, never in the field. Older people hung them for longer.

With the weather as it is now you'd probably be alright if you left them in a garden shed or something the likes of that overnight as it's cold enough if they're not shot through the guts. On one condition though: squeeze the urine out of the bladder as soon as possible because that's what really ruins the finest rabbit carcass.

The only way to clean them no blood so in summer less flies to bother you or getting into the carcase but must be head shot to do it ptoperly

I gut them asap when shooting (quiet moments between shots when I get a chance) I tried push gutting them once or twice but could never get the hang of it, quick careful nick of the knife to the stomach and do the rest with the fingers.
