    With pepper sauce and mashed potatoes. Juicy but not bloody. Not too thick. Or big. Or even steak-like. Cooked on a barbeque, in the sun. With beer and lettuce. And more pepper sauce. :)

    Medium for me with a tidy bit of pink in the middle. Preferably cooked in beer to enhance the flavour.

    Anything more than medium is a waste of a good juicy steak. Might as well eat cardboard.

    Raw and Rare but I voted raw.

    Grass fed beef is lovely and so easy to eat rare and raw (steak tartare a fav) but if you get a poor quality beef (which most is these days) eating it rare is not really an option as it will be so tough and stringy that you won't have an option but to overcook it just to make it edible.

    GBK will do your burger rare if you ask them, BoBos won't and they no longer use O'Tooles organic beef either, damn shame.

    Rare to raw, no need for ketchup because the blood does the job. A1 steak sauce or chef bbq sauce is a must though. Although Isaac Butts do a very good Napoleonic brandy sauce withtheir steaks:)

    yeah I like medium rare eggs and cauliflower juice, its an acquired taste, it'll grow on ye!

    eh... I'm from Dublin!!! and I just have good taste
    (the fact I moved to cavan a month ago has nothing to do with my choices in meat and the fact that it really does save on the lecky bill :P )

    So rare that a well trained vet could make it moo.

    But it depends where I am.

    When making it myself I make it Blue.

    When I am in a restaurant I always ask for blue but get rare no matter where I go!

    So anywhere between Blue and rare and I am happy!

    Sirloin steak, cut into thin strips.
    Marinate in soy sauce, red wine, a little garlic and a finely chopped red chilli pepper.
    Pre-heat a wok with some butter, more garlic, more chilli and a bit of coriander.
    Add the meat and another dash of soy sauce and cook until browned, then add some chopped mushrooms and onions.

    Serve with raw chopped bell peppers, lettuce, cucumber and sour cream/salsa/garlic & herb salad dressing.

    Next week: how to make great pancakes! :)

    I like, a petit filet mignon, very lean, not so lean that it lacks flavour, but not so fat that it leaves drippings on the plate. And I don't want it cooked - just lightly seared on either side, pink in the middle; not a true pink, but not a mauve either, something in between, bearing in mind the slightest error either way, and it's ruined.

    rare, pink to red in the middle, bloody, with pepper sauce and mashed potato. turns into a big bloody gooey mess-YUM!

    Irish people seem to have a mental block when it comes to bloody meat. My mates used to look at me saying thats disgusting etc etc. I tell them to close their eyes and taste it, one by one im convincing them rare is the only way.

    People who get steaks well done actually annoy me, and then they sit at the table saying ummmmm thats delicious.......they can taste sweet feck all!
