Good beer is down to the process, anyone can come up with a recipe

I'm not sure it's quite as simple as you are suggesting here.

What's a bad recipe? all pale ale malt and a single hop? (SMaSH), using sugar (Belgian beer) use of non malted grain (wit beer, CAP, UK bitters), use of bugs (sour beers)

Process is never simple, but if you choice to sterile filter to increase capacity that will strip out flavour and aroma, its a process effect. These not much difference in the ingredients most brewery use these days, your stand pale ale malt will produce good beer in the hands of a good brewery management.

Do you mean bugs as in insects?

Sorry, bugs is a term to mean a mix of bacteria and wild yeast

According to Ratebeer, the O'Shea's range is brewed in Atherstone, England, or so it seems:

Does anyone have any info on this?

***EDIT***Just found the answer, it's where Aldi are based.
