What you ate.....

So I'm trying to eat a bit cleaner at the moment (more veg, less crap). I keep a food diary on a different forum (it's private) but I've found logging it getting a bit boring.

Inspired by the amazing looking pictures in Sapsarrows blog, I've decided to start tracking what I eat with pictures. Thought it might be cool if some others did it. Might change what we eat a bit. A picture's worth a thousand words etc.....

    So....I'll kick things off.....

    Last nights dinner:

    Snacky snacky.....

mods: I'd rather not stick this in the diary section, cos it's not a diary so much as an attempt to get a visual on what other people eat. :)

I only really photograph my epic meals and if I were to post them you'd think my diet consists entirely of fried meats and copious amounts of butter/brie (which it does).

My food may not be the best but here goes!!

I like this idea, I used to post my food for the week at the end of my youtube vids but got out of the habit!

Khannie you lunch looks yum, those juice filled mushies <drool>
I brought the kids to burgerking as a "treat" for end of term, I haven't had it in 6 mths, and I wish I hadn't bothered today.

I'm showing my dinner from last night cos it was so pretty. :)

    25tdw1l.jpg

Mixed peppers, onions and mushrooms slow-roasted in olive oil, and then allowed to go cold and tossed with maple syrup, rock salt, black pepper and red wine vinegar. Served with mixed leaves, caramelised red onion, toasted wholewheat pitta strips and cheddar with two home-made dips alongside - hoummus and goats cheese dip (mashed goats cheese with sour cream).

This plate served two and we left almost half of it behind!

Ok, here was my din dins:

    118585.jpg

Beef stirfry with peppers, mushrooms, beansprouts, carrot and onion.

I had planned it to look nice and it looked lovely and colourful before I put the sauce on (Worcester sauce + sesame oil + tamari + butter + tabasco + beaten egg). Now it just looks like a big plate of brown. Presentation fail.

    It was gawgeous though.

Wow so much action on this thread already! I didn't even notice it until just now, I feel like the last one to arrive at a party! :D I've been asked to post a recipe for primal pancakes (which I plan on making a sugar free fruit compte for) and sugar-free/primal fruit crumble on the blog so I'll post the pics (when I *hopefully* figure out how to make them) tomorrow! Oh oh I just remembered I have a load of rhubarb in the garden... this thread should totally be stickied.

Sorry, couldn't figure out how to add both text AND a photo earlier! This is my favourite summer salad; chickpeas, cucumber, tomato, red onion (I forgot to add that in until after the photo), feta with lots of mint and lemon juice. Added in some chorizo because I had it in the fridge and it was great.

After your kind comments Khannie I couldn't for the life of me get a decent shot of the crumble for the blog! Then it started to rain so I gave up. Doesn't matter what why ya look at it, crumble just aint pretty! Ended up making a strawberry, rhubarb and elderflower one, I just ate 3 portions and feel sick lol. It's grain and sugar-free, I used stevia powder as a sweetener.

The raw ingredients, I love my garden sooo much sometimes :)

edit: Sapsorrow: That literally made my mouth water. Nyom!

    Some stuff I've eaten today:

Natural yoghurt with some crunchy oats and walnuts thrown in. Yum! (I was too lazy to put it in a bowl :o)

This was lunch out in a cafe, chicken and bacon salad:

    118738.jpg

    This was dinner:

    118737.jpg

Steak and mash. The mash is half potato/half swede which is a good way of keeping down the carbs without sacrificing any taste and also packing a little extra vitamins in. It doesn't look like much food but there is over 500 calories of butter in that mash!

Nope. Oats, cottage cheese, whey, eggs and water.

I wouldn't be terribly concerned if they did though. You can be sure I smear sugary things all over them. :D Nom nom raspberry jam.

    Lunch today.

Make no mistake, this is at the end of a debaucherous weekend (we had the baba's christening and various party type occasions along with it). I do have a massive pot of it made though, so it should do for the guts of the week.

You've heard of pizza? Well this is MEATZA! Pizza with a ground beef base.

    119142.jpg

I actually completely ruined it by overdoing the cumin so it was pretty inedible :D. Luckily a friend of mine was to hand and ate the rest of it. I don't think I'll be making it again though, it's a bit blah tbh.

Had two eggs on a piece of toast and a cup of tea for breakfast. Now below is tilapia with oregano and orange sauce, have some oranges and broccoli there too. So easy to make, 20 minutes in the oven with the fish and just steam the broccoli for a few minutes. Also, had a few multigrain crisps (not pictured). :)

Ok, I'm in. Today was the first day in ages I cooked something work photographing.
For brekkie I had 4 eggs scrambled with a knob of butter and splash of double cream, 4 slices of mccambridge bread with butter, 3 psyilium husk and acidophilius tabs with a pint of water. Then a lo-carb monster drink.

after training I had a shake wtih approximately 50-55g of blueberries (frozen ones that I had defrosted), about 200ml milk, tbs splenda, 5g glutamine and two scoops whey isolate. I often have 3 scoops after training but forgot today for some reason. This wasn't very tasty tbh. :(

an hour or two afterwards I had a breaded chicken fillet, about 25g protein and maybe 10g carbs going by what I remember from the packet? Had this with two potatoes and some frozen turnip mashed together. 3 more tabs.

Then I had the meal of the day, this thai prawn curry with wholegrain noodles. was messing around making a sort of dry stir fry and remembered I always had to dilute the curry paste with coconut milk so tossed in small can, about 100ml I think. It would've looked better if I had done this before adding the noodles and then added them at the end, but it tasted really good. Could have done with some extra veg but oh well. That was a 200g bag of prawns, 100ml coconut milk, half an onion, half a red chili, spoon of garlic paste and bigger spoon of chili paste, and a noodle 'nest', 38g carbs on the pack I think.

    DSCF1357_thumb.jpg

(oops I broke the page for a second there).

That'll probably do me until 10 or 11 at which point I'll have a protein shake. If I have any snacks I'll edit this post. Haven't calculated my calorie intake in years probably so I'll do it today for the craic. Overall I think it was an ok day but probably not enough carbs and too mcuh fat for training day (trying to transition into a carb cycling eating plan).

it comes to 2600, 95f, 201c, 230p. Didn't count the veg for brevity's sake. couple hundred cals for butter and other incidentals.

Looks great Susie - recipe pretty please?

  • Closed Accounts Posts: 1,211 ✭✭✭Susie_Q

No problem! The fritters are really delicious.

    Ingredients:
    - 1 large carrot
    - 1 parsnip
    - 3 spring onions
    - 1 slice brown bread
    - 1 egg
    - Good pinch salt
    - Pinch sweet paprika

    Method:

    - Grate the carrot and parsnip into a bowl.
    - Finely slice the spring onions and them them to the other veg.
    - Whizz the bread up in a food processor to make crumbs - this works easiest if the bread is a day or two old. Add it to the bowl with the salt and paprika.
    - Chuck in the egg and mix everything together really well.
    - Heat some olive oil and a little butter in a frying pan over medium heat. When the oil is hot, form the vegetable mixture into little patties in your hands and place them gently into the pan.
    - Saute for 5 - 7 minutes on each side, until golden brown and cooked through.

I like to eat these when they're still hot but I think they would be grand to bring for a work lunch too.

Having lemony low-carb (made with almond meal) pancakes again, this was a blog request from a few days back but today I had them with forest fruit rather than strawberry compote. It's really really wierd though they actually taste just like sponge cake especially with the berries! They are my new favourite brekkie of all time, I would even venture to say these are better than regular pancakes. Been having fun cooking on an open fire the last few days, the last few times we've run out of gas we haven't replaeced it immediately to see how we got on using the fire, made an amazing beef tagine yesterday, fry this morning and lemon pancakes for lunch it's so much fun I feel like a cave woman :D

I made this coconut bread yesterday; http://www.genaw.com/lowcarb/coconut_bread.html it turned out a little eggy, I thought that grinding dessicated coconut would be the same as coconut flour but not really. Picked up a big sack of coconut flour today from the Asian shop so excited to try it again, even though it was slighty eggy its still very nice. Also I made this meatloaf; http://www.jamieoliver.com/foodwise/article-view.php?id=1488
Tastes nice but only realised later that I'd doubled the mince without increasing the other materials. It tastes like a cross between sunday dinner (the stuffing) and a burger. Looks terrible though. Both pretty simple, fairly low carb recipes if anyone's into that kind of thing...

  • Registered Users, Registered Users 2 Posts: 4,057 ✭✭✭Sapsorrow

I'm gonna try get some coconut flour tomorrow that bread sounds divine! I love any excuse to eat coconut.

Had the most savage breakfast/lunch today, probably about as primal as you can get. Peppered mackeral fillets fried on an open fire with the most amazingly sweet tomatos cooked alongside them, it was divine and just as nice as a fry (seriously!), the skin went really crispy and tasty, kind of in the same way bacon does. Gonna stock up on mackeral fillets next time I go shopping and try and make it a good habit.
